BRINGING GLASS TO LIFE
Established in January 2019 after 18 months of research and development,
Illuminated Balustrade Australia is due for release Spring 2019 in Australia
and internationally.

Industry leaders are excited about the many opportunities and applications Illuminated Balustrade Australia is
primed to offer for both the residential and commercial markets.

Illuminated Balustrade Australia’s founder and CEO Mark Behnecke successfully created a patented-design spigot
and lighting system that is set to revolutionise the balustrade market. Using a combination of highest grade 2205
stainless steel to create a new patented spigot design; in conjunction with superior LED lighting and specialty glass,
this balustrade option is nothing short of spectacular.

Available in a stylish square design, the surface-mounted spigots come in both matte black and polished stainless

settings and various modes to choose from. Spare LED lights and RGB controllers are also available should a globe
blow or if a controller is misplaced. The patented-design spigot enables an LED light to be changed should the need
arise without removing the spigot or lifting decking boards to access under-deck or ground cabling. With your choice
of either a soft or colourful glow of light, depending on your mood, the lighting system gives you endless choices.

The Beauty And Spirit

Of Japanese Craftsmanship
INAX Mosaics and Architectural Ceramics are a sought after product in the
Australian design community and are now available exclusive to Artedomus.
Drawing on Japanese tradition and culture, INAX artisans produce
handmade, extruded, sheeted mosaics and tiles suitable for walls, flooring
and benchtops in bathrooms, kitchens and laundries, as well as on exterior
façades. The unique quality of the glaze and colour of the porcelain ceramics
separates them from other products available on the market, and the
exceptionally hardwearing tiles undergo a long, slow baking process.
The collection of exquisite and unique tiles is inspired by traditional
motifs and created with intricate shapes and carefully calculated thicknesses
in order to create textured effects and plays of light and shadows.
Artedomus knows the power a singular product can make in a space
and is setting the benchmark in truly exceptional stone, tiles, bathware
and furniture and architectural surfaces. INAX Mosaics and Architectural
Ceramics are on display at its four showrooms in Sydney, Melbourne,
Brisbane and Perth.

Say No To Mould
With many people working and studying from home this winter, Schweigen’s
latest range of silent exhaust fans are here to keep your air fresh and clean,
without any distractions.
The moisture from daily activities accumulates in the indoor air and
eventually condenses if not properly vented. Persistent condensation can
damage your home and its contents. It also triggers mildew, mould growth
and dust mite infestations. As a result, a poorly ventilated house can
exacerbate health problems like asthma, bronchitis and can cause throat,
eye, skin and nasal irritation.
Breathe easier with Schweigen’s silent exhaust fans. Available in a range
of vent styles and finishes, these silent, yet powerful units are designed to
be installed on the roof, wall or eave; suitable for almost any room in your
apartment, townhouse, single or multi-storey home.
Chat with the brand behind Australia’s best-selling silent rangehoods
and exhaust fans to find the perfect solution for your home.

All of Gatti Design’s on-site builders have continued

Over the next year, Gatti Design will be unveiling some

A STONE FOR THE AGES
As one of the most labour-intense regions of the
home, a good kitchen requires benches that are
durable, and resistant to the wear and tear of
everyday life. As such, choosing the correct stone
type to suit your lifestyle is essential. “We would
recommend granite, quartzite and dolomite for
kitchens as they are the hardiest,” Edwards says.
Marble’s elegant soft veining and white and grey
colour palette has long been a popular choice for both
kitchen and bathroom design; with its bright, neutral
colours making it extremely versatile and adaptable to
any home. However, as marble contains minerals, it can
be more susceptible to rust and damage from acid-based
kitchen and bathroom products. “It is important not to use
any products that have lemon or orange in them, as these
are acidic and can damage the marble,” Edwards advises.
“Warm and soapy water is fine to clean the benchtops.”
In order to preserve its integrity, ensure your stone is effectively
sealed, as this will prevent scratches and permanent damage.
Sealing your natural stone creates an external barrier between
the stone itself and environmental pollutants, preventing any oil,
water and dirt from disrupting the inner layers and slowly eroding
the stone. This is an excellent option for the softer limestone which
is more porous and can be prone to etching. “Sealing is essential on

ahead to learn about the various aspects that are
crucial for creating the perfect butler’s pantry for
your home and lifestyle.

SECRET STYLISH STORAGE

One of the reasons homeowners choose to add
a butler’s pantry to their kitchen is the prospect
of additional storage for their kitchenware and
appliances. While extra room for your cooking
goods is a brilliant concept, homeowners should
be wary of hidden pitfalls prior to design.
Installing deep shelves can be an issue, as hard-
to-reach items can get lost in such a confined
space. While most homeowners would assume

INTENTIONAL LIVING
REFINED, INDUSTRIAL ELEMENTS

This striking kitchen renovation project by Darren James Interiors embraces industrial architecture and functionality. The
homeowners wanted to modernise the design while also honouring the exposed columns, beams and original brickwork
of the building. Inclusions such as textured patterned tiles, large format porcelain sheets and powder-coated metals
accomplish this desired feel.

Working within the kitchen’s existing architectural footprint was the main challenge of the design. Darren James Interiors
overcame this by ensuring the layout worked effectively within the exposed structural beams, creating intention in the space,
rather than divergence.

A chief component of the original brief was to establish efficiency and ease for the homeowner. Darren James Interiors
achieved this by installing Blum Servo Drive electoral opening systems into all drawer joinery, while the integrated Sub-Zero
fridge and Miele cooking appliances are positioned at heights to suit the client’s ergonomics. An electric under-bench pop-up
is situated within the kitchen’s island, housing a toaster and coffee machine to declutter the bench space.

Above the benchtop sits a custom-designed unit with a metal frame that speaks to the industrial elements of the property,
further creating visual harmony. Flos Aim pendant lights are suspended above the island, optimising the kitchen’s double
height void and complementing the exposed metal shelves above the parallel bench. The feature splashback is another
standout element of the design, crafted from hexagonal tiles that add texture and encapsulate the apartment’s overarching
aesthetic.

RURAL RETREAT
Designed by Acquavita Pools & Spas, this Wallington pool was inspired by the natural
beauty of the scenic locale.

Briefed with creating an environment that is not only aesthetically pleasing, but also provides a perfect space for
outdoor living and entertaining, the team at Acquavita Pools created this freshwater pool with multifunctionality at
its core.

The vibrant pool, tiled with Mediterranean blue mosaics, was built asymmetrically to include a large family end for
relaxed swimming and playing, as well as a 15-metre-long lap lane. The natural stone paving blends seamlessly with
the home’s design, allowing the pool to remain the standout feature of the outdoor area.

The residence’s beautiful landscaping is cleverly complemented by a combination of timber and glass fencing, which
simultaneously form a barrier, creates a visual point of interest, and provide the outdoor area with a spacious feel.

This bold statement piece by Chase Wilson showcases superb embossed cabinetry and sophisticated features while keeping
clutter to a minimum. The project was a collaboration between Chase Wilson and Jitta Jack Interiors, and the impressive
final product encapsulates modern elegance and ease-of-living.

As the kitchen is situated just near the entry, the clients wanted a space that could always be on show without the need to
de-clutter whenever guests arrived. This was achieved by converting a previously unused office into a butler’s pantry – a feat
that was skilfully carried out by D Pearce Constructions. The new butler’s pantry houses a fridge, pantry and Zip tap, leaving
the main kitchen free for a wealth of entertainment possibilities.

Reconstituted stone was used for all the benchtops and splashback for a seamless finish, while the translucent veins
coordinate with a range of colours throughout the kitchen. Constructed from the same stone, the island bench’s 80mm-thick
waterfall edge further enhances the kitchen’s luxurious quality. This generous island bench acts as both a gathering point
and a hero piece, while the open-plan design allows the homeowners and guests to move about with ease.

INTRICATE DETAILS AND PRACTICAL STORAGE SOLUTIONS

Timeless elegance is presented with matching cabinetry and pewter handles in this homely kitchen and partnering bathroom.
Wanting to showcase beautiful collectables and homewares, Maytain Cabinets specially developed ten glass framed cabinets
with shelves and interior lighting for this U-shaped kitchen. Along with this inventive lighting, the circular tessellated tile
splashback adds further visual interest to this dynamic kitchen design.

Maximising wall and storage space was a priority for the homeowners; Maytain Cabinets expertly executed this brief with
the installation of ample drawers, cupboards and overhead cabinetry. These storage solutions both minimise clutter and
optimise food preparation areas. A walk-in pantry and premium Fisher & Paykel appliances ensure this kitchen is both
cooking-ready and family-friendly.

MAYTAIN CABINETS

A STRIKING PICTURE
UNIQUE, EARTHY TONES

In its newest project, Maytain Cabinets has created a kitchen that is as much a statement piece as it is functional. The
client wanted a spacious, easily maintained kitchen that also had a strong aesthetic appeal. Conscious of the architectural
challenge of curved walls, Norm Ainsworth, Maytain Cabinets’ in-house designer, created the kitchen to optimise every
corner of space.

With seven display cupboards, numerous drawers and a generously sized pantry, this kitchen makes excellent use of its
space. The large kitchen island bench is fitted with a deep bowl sink, which is perfectly sized for the chef in the family. Large
enough for informal dining, the island also adds a social element to the design.

Contributing to the unique quality of the kitchen is the use of natural surfaces, including farmers timber grain and granite
counter tops. The bold, black forest gold granite counters and splashback are balanced nicely by the muted, natural-oak
cabinets. The kitchen makes a lasting impression, showcasing a dynamic alternative to the minimalist designs of most
modern kitchens.

ACTION KITCHENS

A MODERN MAKEOVER
OPULENT AND FUNCTIONAL

This full renovation, designed and created by Action Kitchens, combines a practical layout with a modern aesthetic. Featuring
integrated appliances, stylish Smartstone splashback and a capacious island bench with a chic Franke sink, this kitchen
acts as a hub for the whole family to cook together and entertain guests. The previous design made access to the adjoining
family and dining room difficult, but this revamp has extended and opened up the space to improve flow between formal and
informal dining areas.

The simple yet unique design of the timber Laminex cabinetry adds a splash of contrast to the kitchen’s crisp white motif
and gloss panelling. At the client’s request, this project also features a multitude of storage, including hidden drawers and
spacious cupboards, which allow for ease of organisation whilst adhering to the kitchen’s modern theme.

46 KITCHEN + BATHROOM DESIGN

All appliances were chosen with functionality as their primary criteria. The homeowners wanted a kitchen they would enjoy
cooking in that was also visually appealing. The PITT Drum cooktop streamlines cooking for simultaneous use of all burners
while complementing the kitchen’s contemporary design. Above the PITT Drum cooktop is the stainless steel Falmec Siena
rangehood with touch controls, while on the right, integrated Liebherr fridges blend seamlessly into the cabinetry for a sleek
finish. However, the sparkling feature piece is the dual V-ZUG steam ovens – designed to increase cooking capacity and
convenience.

The new structural alterations and bright colour scheme work in tandem with the natural light flowing from living area’s full-
length windows, re-enforcing the sense of opulence and spaciousness in the room. From the two-pack white gloss cabinetry,
to the discrete storage solutions and state-of-the-art appliances, Action Kitchens’ design exudes luxury and efficient living.

The design was further enhanced by zoning the kitchen into separate workstations, as well as incorporating a range of high-

A wine rack and display cabinet have also been incorporated to showcase bottles and glasses for a touch of luxury, while a

MG CABINETRY

IDEAL ENTERTAINING
MINIMALIST AND EFFICIENT

Renovated by MG Cabinetry, this minimalist, monochrome kitchen was designed to become the centrepiece of the home.
The homeowners are passionate about cooking and entertaining, and wanted a kitchen that would act as a hub for guests
and the entire family. While it was important that the space be conducive to entertaining, the client wanted the kitchen to be
equally functional and accessible.

In conjunction with the property’s renovation building designer, Arco Designs, MG Cabinetry achieved the brief by installing
a cooktop on the island bench, rather than the backwall. This allows the homeowner to interact with guests and family while
cooking. As most homeowners will spend more time at the cooktop than the sink, MG Cabinetry had the ingenuity to switch
the layout, ensuring a truly user-friendly design. The pop-up downdraft rangehood on the island bench creates a safety
barrier between the cooking area and adjoining dining table. The Ironbark solid timber dining table is suspended from the
island bench, creating a unique feature that facilitates further interaction within the kitchen and dining areas.

KITCHENS BY BOWEN

FUNCTIONALITY AT THE FOREFRONT

A TRIUMPHANT HAMPTONS DESIGN

This elegant kitchen was designed and built by the experienced team of cabinetmakers and designers at Kitchens by
Bowen. Boasting attractive Hamptons style and impressive functionality, this kitchen is a testament to Kitchens by Bowen’s
outstanding craftsmanship.

The homeowner provided a brief to deliver a luxurious and beautifully appointed Hamptons-style kitchen. The renovation
revitalised the heart of this home, breathing new life into the stunning waterfront property.

Complete with detailed, high-end finishes, every inch of this kitchen is a picture of Hamptons elegance. Satin two-pack
cabinets create a clean, white finish bordered by detailed mouldings in the kickfaces and bulkheads, offering a beautiful
contrast with the Palermo tiled floor. The benchtops and splashbacks are constructed from 20mm-thick Calcatta Signature
stone – presenting both durability and unparalleled sophistication. Thoughtful, final touches like chrome handles and
tapware ensure that this kitchen leaves a lasting impression.

62 KITCHEN + BATHROOM DESIGN

The curved island bench is a unique point of difference within the breathtaking design. Built with a matching Calcatta
Signature benchtop and detailed to Hamptons perfection in white to match the surrounding cabinetry, unity is clearly
established throughout the space. The rounded island bench immediately draws the eye while softening the harder edges
of the kitchen.

The client was equally concerned with functionality, so Kitchens by Bowen carefully crafted floor-to-ceiling storage spaces
to ensure every appliance, utensil and ingredient has its place. From drawers to cupboards, there are storage solutions of
every size hidden behind the crisp white doors, as well as bench seating at the front of the island bench, with additional
storage facing the kitchen.

Careful planning was vital to the successful completion of this project. The renovated kitchen had to fit inside a similar
footprint to the original space, which posed a challenge when maximising functionality and creating elegance. Despite this,
the experienced team drew on their shared expertise to create clever design ideas to exceed the client brief.

SUPERIOR SOLID SURFACE

SOLID CHOICE
RELIABLE, FLEXIBLE AND STYLISH

Superior Solid Surface specialises in manufacturing and installing quality solid surface. First conceived as an
alternative to granite countertops, solid surface is both durable and highly flexible in its form and applications.
It’s composed of a bauxite filler and resin for strength, with pigments and particulates added during the manufacturing
process to form countless colours and patterns.

This project, designed by Mark Gacesa of Ultraspace, showcases the striking appearance and versatility of solid
surface. The material is chemically cured and can be cut into sheets or shapes as desired. Thanks to its
thermoformable properties, solid surface can be used to create countertops, splashbacks, wall cladding, flooring,
furniture and artistic freeform shapes. The end result is sleek, smooth and can be beautifully patterned or coloured,
or made to match the appearance of natural stone. With so many options from one product, the Superior Solid
Surface team loves a challenge and prides itself on providing a high-quality final result.

Solid surface offers a lot of advantages to customers besides its stylish appearance and flexibility in shape and colour. As the
material is non-porous and anti-bacterial, it's extremely hygienic and resistant to mildew and mould, making it the perfect
choice for kitchen and bathroom services. Joining techniques of solid surface are seamless, and in some cases even invisible
to the naked eye.

A simple wash with soapy water makes the solid surface look as good as the day it was installed. If scratches or chips do
occur, they are easily repaired at little cost. Superior Solid Surface completes projects across Brisbane and the Gold Coast
area, and whether it’s a residential renovation or a commercial fit-out, you can expect the same great customer service and
exceptional workmanship.

JNI INTERIORS

A UNIQUE, HOLISTIC DESIGN

WARM TONES AND NATURAL FIXTURES

This gorgeous light-filled home provides ample space for the contemporary family. JNI Interiors’ open-plan design facilitates
beautiful flow from one room to the next, while high ceilings and large windows fill each room with natural light and enhance
spaciousness.

The sharp lines and fine details that exemplify the home’s architectural design posed an initial challenge when transforming
the interiors into a warm, welcoming space. JNI Interiors was able to incorporate this architectural aspect into the design
using shadow lines and incorporating joinery into the home’s structure for an integrated look.

Driven by functionality, JNI Interiors introduced clever storage solutions in the existing architecture to maintain cohesion
throughout the home and avoid clutter. A butler’s pantry and extensive use of drawers and cabinets expertly achieve this.
Additional shelving was also installed in study nooks to showcase collectables, while shelves were integrated within the
kitchen island, and an expansive, wall-length wine rack was added to the cellar.

68 KITCHEN + BATHROOM DESIGN

Warm tones and natural materials were carefully utilised to create an inviting home. Marble and timber give the joinery a
natural appearance and texture, while blending perfectly with the home’s exterior. Finger-pull cabinetry removes the need
for traditional handles, while the timber inserts maintain the kitchen’s natural feel.

The installation of finger-pull drawers and integrated touch-to-open bins ensures the kitchen is modern, functional and
stylish. The impressive Smartstone tundra grey kitchen island seats three and offers ample space for food preparation and
informal dining. An adjacent smaller bench offers further seating potential for younger family members. Situated close the
entrance landing, outdoor area, and living area, this kitchen is the central hub of the house, perfect for entertaining guests.

JNI Interiors’ breathtaking design skilfully balances functionality with aesthetic, creating an inviting kitchen that epitomises
modern living.

KITCHEN EVOLUTION

LIGHTFILLED LUXURY
TIMELESS BEAUTY WITH IMPECCABLE FINISHES

Built and designed by Kitchen Evolution, this bright, eye-catching project combines luxury with practical, family-living appeal.
Sporting both functionality and an alluring design, this kitchen utilises large open workspaces, ample bench space, generous
storage options, and a multi-purpose island to meet even the largest family’s needs. Ensuring the kitchen achieved aesthetic
balance and remained proportional was the top priority for Kitchen Evolution. An open-plan design with extensive storage
space and a large butler’s pantry was created to achieve this brief.

Defined by sleek, glossy white cabinetry, and a neutral tile splashback, this breathtaking kitchen’s white colour scheme and
LED strip lighting culminates in a stunning, light-filled abode. The unmissable Smartstone ‘Amara’ benchtop is the kitchen’s
touchstone; a space where family members can prepare a meal, complete work or simply socialise.

Matching the exceptional brightness of the kitchen, Kitchen Evolution’s elegantly designed laundry utilises the same white
colour scheme and white tile splashback to enhance a sense of space, while the soft olive green of the over-bench cabinetry
adds a subtle contrast to the Smartstone Arcadia benchtop. With floor-to-ceiling semi-gloss cupboards and abstract black
and white tiled flooring, the laundry is easily bathed in natural light. Generous-sized counters and cabinetry ensure the
laundry is both visually appealing and functional.

72 KITCHEN + BATHROOM DESIGN

Epitomising a modern aesthetic, the kitchen design includes parallel French doors to harness natural light and allow a
seamless transition between the kitchen and the alfresco area. Kitchen Evolution’s symmetrical cabinetry design and
strategically placed sink and stovetop work to draw eyes to the centre of the kitchen, where the unique, patterned splashback
can be admired. The clever placement of these appliances and the fridge ensures a neat work triangle is formed – optimising
kitchen efficiency and minimising foot traffic during meal preparation.

Replete with luxurious features and ample space, this project has undeniable charm and the storage facilities to meet the
needs of a modern family. The classy white colour palette in the kitchen and laundry gives both spaces a timeless feel,
granting homeowners the freedom to add a pop of colour to these spaces in the future. With vast bench space and a handy
breakfast bar, even the busiest of family members can stop to enjoy a meal in Kitchen Evolution’s opulent space.

GATTI DESIGN

TIMELESS HAMPTONS STYLE

A WELCOMING AND SOPHISTICATED SPACE

This awe-inspiring kitchen by Gatti Design creates a space where the whole family can come together. This renovation
project draws inspiration from a Hamptons-style home, while working to the classical Australian architecture of the existing
Queenslander house.

The open layout and ample windows allow for cross ventilation and cooling with limited use of air-conditioning. Great
care was taken to reduce the kitchen’s environmental impact with the installation of solar panels and waste reducing food
storage, and the use of natural materials where possible.

This stylish yet functional Hamptons design combines a classical aesthetic with modern features, including an expansive
island bench, a neat breakfast nook, a spacious butler’s pantry, heating and cooling drawers, and three separate sink
stations.

Functionality is key, and although Gatti Design’s open-plan design and multiple windows connect this kitchen to both the rest
of the home and the exterior, each section is clearly defined in its purpose.

76 KITCHEN + BATHROOM DESIGN

The juxtaposition of light and dark cabinetry offers contrast between the butler’s pantry and the main kitchen, and the use
of soft light colours in the primary space ensures the custom Caesarstone benchtops and marble tiles to stand out. Storage
and appliances are neatly zoned for ease of access and offer a range of hidden features, including drawers, recessed shelves,
towel racks and knife blocks.

The appliances were hand-picked by the homeowners for both their design and performance. The Wolf induction cooktop and
integrated rangehood form an elegant feature wall, while the Sub-Zero fridges blend perfectly into the classical shaker-style
panelling. The central island bench – complete with an inbuilt bar fridge – acts as a bridge between the dining and cooking
areas, as well providing additional storage and workspace. The pair of crystal chandeliers above the bench add a touch of
glamour to the room without distracting from the careful detailing and layering of elements throughout.

A final detail of this impressive Hamptons design is the double hung windows over the kitchen bench, which open completely
to the exterior deck and allow a seamless transition to the outdoor area.

When building or renovating your kitchen, there
are many factors to consider during the design
phase. “Kitchens have to withstand the rigors of
everyday use, so it’s important that they not only
look good but can stand the test of time,” Singh
advises. As the kitchen is the central point of the
home, integrating timeless design choices and
practical fixtures will help create an inviting space
for family and friends to gather for years to come.
With modern kitchen design characterised by sleek Singh encourages homeowners to prioritise three
essential features: seamless workflow, ample
finishes, clean lines and functionality, the move storage space and high-quality motion. Assess the

KITCHEN OF INVENTION
As minimalist kitchen design advances and evolves,
the trend of handle-less furniture and cabinetry
continues to gain momentum for timeless, clean
finishes. “Furniture fronts without handles, large
expansive surfaces, clear cut design and minimal
gaps create a smooth uninterrupted look,” Singh
expands. It’s the dedication to these characteristics
that distinguishes modern, minimalist style from
other designs and allows for further developments
in accessibility and practicality.
Modern-style kitchens have seen an evolution
of handles in a variety of designs, ranging from
large to small, and transitioning from handle-less
to touch-to-open cabinetry. The classic minimalist
sensibilities are launched into the future with
motorised cabinetry that eradicates the need
for handles. “A single touch or a light pull of the
handle-less suffices and the pull-outs seem to open
by themselves,” Singh explains. Blum Australia
prides itself on inventing and developing new ways
to interact with kitchen cabinetry. “Before any new
development is done at Blum, we observe and
research how people all over the world use their
kitchens, what obstacles they face and what works
well for them,” Singh says. When planning and
designing your kitchen, this mentality should be
the driving force behind your joinery, cabinets and
storage, as your kitchen’s functionality, accessibility
and user convenience will be determined by your
primary needs. “The functionality of furniture is
particularly important for everyday use,” Singh
adds. “It needs to promote ergonomic workflow,
provide enough storage space and be easy to use.”
Motorised kitchen cabinets are transforming
kitchens across Australia, offering greater
assistance and convenience, as well as enhanced
accessibility for homeowners of all heights, ages
and abilities. Blum Australia is proud to be at the
forefront of this design innovation to help improve
day-to-day living for families. “Our products are

It’s no secret that salmon is rich in omega-3 fatty acids, which offer a range of health-related benefits.
What scientists have recently discovered, though, is that these benefits may be due in part to increases

2 tablespoons ghee or extra-virgin olive oil

Method

Steam the cauliflower for 10 minutes, or until tender. Transfer to a food processor and blend until finely chopped.
Put in a medium bowl and add all remaining ingredients except the ghee. Stir to combine.

Line a baking tray with baking paper. Dust a clean kitchen bench, and your hands, with some arrowroot. Divide the gnocchi mixture into quarters. Using your
hands, gently roll one quarter at a time into 2cm-thick logs. Dip a small sharp knife in some arrowroot and cut each log into 2cm pieces. Gently squeeze each
piece in the centre to give it the classic gnocchi shape, then transfer to the prepared tray.

Melt the ghee in a large frying pan over a medium heat. Cook the gnocchi in batches for 1–2 minutes on each side until golden brown.
Transfer to a plate and set aside.

To prepare the creamy pesto sauce, pour the coconut and almond milk into a frying pan and simmer over a medium heat for 2–3 minutes until reduced a bit
and slightly thicker. Add the pumpkin seed and herb pesto, stirring to combine, and heat through. Add the gnocchi to the pan and ladle with sauce to coat.

Serve the gnocchi in shallow serving bowls scattered with shredded basil and topped with freshly ground black pepper.

FIG, GARLIC AND
OREGANO BRAISED
CHICKEN
Baked chicken is my family’s Sunday night dinner ritual. It’s so easy, versatile and full of flavour,
and nourishing for the week ahead. This simple yet delectable combination of fig, lemon, garlic
and oregano has been used in Mediterranean cooking well before we knew about these ingredients’
benefits for our health. Lemons are high in vitamin C, an essential nutrient for fighting inflammation,
figs are a great source of fibre and garlic provides a good source of prebiotic inulin. Carvacrol,
the most abundant phenol in oregano, has a bunch of benefits too, and is shown to stop the growth
of several types of pathogenic gut bacteria.
