YOU Are a Leader Speaker Barbara Mayfield


In this presentation Barbara Mayfield and 4 other professionals from the academy talk bout
leadership within the dietetic field. They discuss the different types of leadership styles and when
they are beneficial. The presenters also talked about the importance of communication within a
leadership role and all the different aspects of communication. This includes empathy, body
language, what they say, and how the receive information.

Involving the life inside speaker Tzu-Wen Cross


This presentation discussed the human gut microbiome and the importance of it. Microbiome can
affect c-diff, IBD, and IBS. She went over what a microbiome is and the microbiota that lives
within it. I learned there is no “normal” microbiome, and everyone’s microbiome is different.
The speaker said your microbiome is as unique as your fingerprint. She discussed what her lab at
Purdue is doing to continue learning about microbiomes.

Unlocking the Keys to Business Success Speaker Beryl Krinsky


In this presentation she discussed entrepreneurship within the dietetic field. Skills that you have
from being in the dietetic field and skills that you need to further develop to be a successful
entrepreneur. Some of these skills that would need further development include marketing, sales,
business, public relations, and finances. Lastly, she discussed business start-up and how to go
about starting up a business and tips to make sure you do it correctly.

Elevating Snacking Choices Speakers Rob Granberg and Raona Baker


In this presentation the presenters talked about the snacking statistics in the United States and
how to improve the choices being made. She discussed the health benefits of snacking when it is
a healthful snack. Rob talked about charcuterie boards and if you look at them, they contain food
all similar color like meat and cheeses. He discussed making changes to the boards to add color
with fruit, vegetables, and dips. The second half of the presentation was him showing us how to
make a charcuterie as a better evening snack choice.
Affirming Health Care speakers Kelsey Chapman, Aiden Powell, and Jessica Rorick
This presentation talked about inclusion for the LGBTQIA+ community. The presenters first
went over the terminology of the LGBTQIA+ community. The first word she went over was
identity; this would include identity, gender, gender identity, and gender expression. Other terms
reviewed were sex, sexual orientation, nature vs. nurture. Challenges that the Trans community
that relate to dietetics and how to addresses them correctly. Lastly, they touched on how to create
an inclusive health care setting for patients.
Food Tribes Speaker Wendy Bazilian
The speaker said, “ Consumers think of food as a means of health and part of their personal
identity, which I found relatable. A food tribe is a community that shares preferences regarding
the types of food they eat or don’t eat. She mentioned that 33% of people try a diet that isn’t
based of medical needs. Some of the food tribes include gluten-free, Paleo & keto, plant-based
eating, clean eating, and intermittent fasting. She then discuses every bite count and what that
can mean with talking to different food tribes.
Can Agriculture Save the Planet? Speaker Jack Bobo
In this presentation the speaker is covering the impact of agriculture on the planet and how that
related to nutritional health. 70% of all fresh water is used for agricultural which is causes rivers
to not flow into the sea, due to the amount of water being pulled. The demand of food and the
increase that we will see by 2050 is very high and something I didn’t expect and the amount of
people that die from hunger every day. He then went into discussing the positives of agriculture.
Post, Tweet, Snap, Share: Ethics in Social Media Speaker Drew Helmer
Ethics is the difference of what’s good and what’s bad represented as a set of principles or a
value system where professionalism is putting ethics into actions and meeting the standards of
the system. The academy’s code of ethics includes non-maleficence, autonomy, beneficence, and
justice. How to set professional boundaries, privacy and confidentiality, self-identification,
content-credibility, professional liability, intellectual property, and copyright infringement. He
then talks about the consequences of not following these requirements.

Set the Mood for Health with Policy, Systems, and Environmental Change Speaker Melissa
Pflugh Prescott
In this presentation the speaker talks about what influences people’s food choices. This includes
biological, economic, physical & time, psychological, social determinants, and attitude, skills,
beliefs, and knowledge about food. The speaker talked about setting the mood for health and
what that encompasses. Such as policies, system changes, and environmental change. She then
went through examples explaining how to set the mood for health within the work place.
