PREFACE

In preparing salad and dressing, we must set and organize all the materials and
ingredients before preparing the food. We have to perform the so-called mise en place.
Knowing the proper tools, equipment and utensils needed in preparing salad and dressing
helps, us set and prepare a creative and palatable salad. It helps us make a quality and
attractive salad. The basic understanding of tools used in preparation will help achieve
better result. Identifying the tools, equipment and utensils in preparing salad and dressing
will help us easily prepare the given recipe for salad.

The learners should familiarize themselves about the common tools, equipment
and utensils needed in preparing salad and dressing so that the learners can simplify the
procedures in preparing salad and dressing. It will be easier for them to prepare salad recipe,
if they are familiar with the tools that the learners are going to use in every procedures that
they are going to do. The learners should read and do the activities in this Self-Learning
Kit (SLK) so that it would be easier for them to perform and prepare salad and dressing
efficiently. Using this SLK will also attract the learners to set and organize the tools needed in
preparing the salad to have a creative salad presentation.

The SLK should handle with care. Please avoid any unnecessary marks and notes
on its pages. Avoid folding the pages of the SLK. There should be a separate answer sheet
for the activities given in the SLK. Do not write down your answers on the pages of the SLK.

3. classify the different tools and equipment in preparing salad according to its
specific functions and categories.

Do you know the different tools and equipment in preparing salad and dressing? Well,
that is what you are going to learn in this material. So, let us start!

WHAT YOU NEED TO KNOW?

Preparation of salad and dressing is really a wonderful skill and activity. However,
there are things that we should consider in preparing salad. Mise en place is a French term,
which means setting everything in place and organizing all the materials and ingredients
before preparing foods. A part of the mise en place is identifying the tools, equipment and
utensils needed in preparing salad and dressing.

Salad is a combination of vegetables, fruits and other ingredients served with a


dressing. We need specific tools in preparing salad in order to come up with a good quality,
nutritious, creative and palatable salad.

Here is the list of tools necessary in preparing salad and dressing.

1. Knives – A good quality knives with sharp sturdy stainless


steel blades and with handles that securely attached and
feel perfectly comfortable in your hands. It is used in cutting
ingredients in different sizes and shapes.

2. Peeler – It is use to remove the outer skin of a


vegetable, like potato and carrots, and fruits such as apple
and pears.

3. Cutting board – It comes in wood, hard plastic or even


in glass where we place the meat, vegetables or fruits to be
cut or chopped.

4. Citrus Zester – To use a zester, it is pressed with moderate


force against the fruit and drawn across its peel. The rims
cut the zest from the pith underneath.

5. Grater/Shredder – It is used to grate foods into fine pieces.

6. Grill Pan – It is used for salad toppings to be boiled or grilled.

7. Salad Spinners – It is used to hold just washed salad leaves


in a slotted basket that is made to spin by hand and thus
fling all the water off the leaves into the outer container.

8. Mixing Bowl – It is used to mix dressings, marinate ingredients,


hold separate elements of a salad before assembling and
used to toss and mix all the ingredients together.

9. Salad Servers – Salad sets with big salad bowls,


serving bowls and servers. Select materials having
enough surfaces to really grasp the ingredients of
salad, no matter hovw slippery and thus making
tossing easier.

10. Measuring Cup – It is used to measure dry ingredients


and can be made out of plastic, aluminum and
stainless.

11. Measuring spoon – It is used to measure small


quantity of liquid and dry ingredients and it usually
made up of plastic, aluminum and stainless.

In preparing salad, there are several ingredients that we need to prepare that we
can use the different tools and equipment. Freshness and variety of ingredients are essential
for high quality salads. Here are the list of ingredients where we can use the different tools
and equipment in salad preparation:

SALAD INGRIDIENTS

1. Salad greens – Iceberg lettuce, Romaine lettuce,


Boston lettuce, Biff or Limestone Lettuce, Chinese
cabbage, Spinach, Sprouts.

2. Vegetable (Raw) – Avocado, bean sprouts,


broccoli, cabbage, cauliflower, celery,
cucumber, mushroom, onions, peppers, radish,
tomato.

3. Vegetables (Cooked, pickled and canned) –


asparagus, beets, carrots, cauliflower, corn,
pimiento, olives, peppers, cucumber.

4. Starches – dried beans, potatoes, macaroni


product, grains, bread (croutons)

5. Fruits (Cooked, Fresh, Canned or Frozen) –


apple, banana, berries, coconut, melon,
orange, papaya, peaches, pears and
mangoes.

6. Protein Foods – meat (beef, ham), poultry, fish


and shellfish, salami, luncheon meat, bacon,
eggs, hard cooked cottage cheese, aged or
cured types.

7. Miscellaneous – gelatin, nuts

In salad dressing, we use appropriate tools in order to make quality dressing for
your salad. Here are the ingredients of a salad dressing that we need to prepare using
the different tools.

SALAD DRESSING INGRIDIENTS

1. Oils - should have mild, sweet flavor. Strongly


flavored oil can make excellent salad dressing but
not appropriate with every food.

2. Vinegar – should have a good, clean, sharp flavor.


Most salad vinegar are about 5% acidity, but some
range as 7-8%.

3. Lemon Juice – Fresh lemon juice maybe used in


place of or in addition to vinegar in some
preparation.

4. Egg yolk – as essential ingredient in mayonnaise


and other emulsifier dressings. For safety
pasteurized eggs should be used.

5. Seasoning and flavor- fresh herbs are preferable


to dried herbs. Other flavorings include mustard,
ketchup, Worcestershire sauce and various kinds
of cheese.

Give the importance of tools and equipment in preparing salad by selecting tools ac-
cording to their specific functions. Choose the letter of the correct answer.

1. Salad sets with big salad bowls, serving bowls and servers. Select materials having

sturdy, heavy glassware or ceramic, so as not to react with acidic ingredients.

3. It is use to hold just washed salad leave in a slotted basket that is made to spin by hand
and thus fling all the water off the leaves into the outer container.

4. It is approximately four inches long, with a handle and a curved metal end, the top
of which is perforated with a row of round holes with sharpened rims. To operate this, it is
pressed with moderate force against the fruit and drawn across its peel. The rims cut the
zest from the pith underneath.

5. It is a kitchen tool consisting of a slotted metal blade attached to a handle that is use
to remove the outer skin or peel of certain vegetables, frequently potatoes and carrots,
and fruits such as apples, pears.

6. It is used to measure dry ingredients in a given recipe.

7. It is used to measure little or small amount of dry or liquid ingredients in a given recipe.

8. Choices of boards are wooden or block and acrylic board. When preparing recipe that
all contains meat, poultry or vegetable requiring cutting, use one board exclusively the
vegetables and other exclusively for the raw meat to avoid cross contamination.

9. It must be of good quality with sharp, sturdy stainless steel blades and with handle that
securely attached and that feel perfectly comfortable in your hand.

10. It is use for salad toppings to be broiled or grilled.

TOOLS AND EQUIPMENT IN SALAD PREPARATION

This Self-Learning Kit (SLK) is all about the tools and equipment necessary in
preparing salads and dressing. The learners will familiarize themselves about the tools
and equipment in this SLK as well as the functions and uses of the different tools in
preparing the salads.

In this material, the learners will be able to identify the tools and equipment
that they are going to use every time they will prepare a salad. This SLK helps the
learners to select easily used the tools and equipment that they need in preparing
salad and dressing.

WRITER: MA. NELFA CASTILLO TRINIDAD She currently teaches at Orani National High
School, Tugatog Orani, Bataan. She graduated BSE major in Home Economics at
Centro Escolar University in the year 1988. At present, she teaches Cookery 7,8,9,10 for
Junior High School. She is a licensed professional teacher.

– Main Campus with the degree of Bachelor of Science in Computer Science Major in
Software Development, year 2016. He earned his Trainer’s Methodology I (TM I) at Manila

year Certificate in Professional Education at Tomas Del Rosario and eventually passed
the Licensure Examination for Teachers last 2018. He is currently serving as a teacher in
Technical-Vocational-Livelihood at Limay Senior High School-Duale, Limay, Bataan.
EVALUATOR: DONNA T. SANTOS, MAEd A graduate of Asia Pacific College of Advanced
Studies, Inc. with the degree Bachelor of Secondary Education major in English. She
finished her Master of Arts in Education major in Language Education degree at Bataan
Peninsula State University - Main Campus. She was a private school teacher for two years
at Mt.View Village School of Mariveles and also a former English instructor at Polytechnic
University of the Philippines (PUP)-Bataan Branch under CHED. Her first experience as
public school teacher was at Mariveles NHS-Cabcaben. At present, she is a Master
Teacher I at Mariveles Senior High School -Sitio Mabuhay, Cabcaben Mariveles, Bataan.
