Jasha Maroo - Bhutan

Bhutan is a country located in Southern Asia, in which the culture and cuisine have been
greatly influenced by its location. It is clear the effect that other nations in the same region of
the globe have on traditional dishes of the country - for example, the presence of spicy
ingredients, just like in India. Also, due to the topography of Bhutan, with many high
mountains and cold weather, it has many hot, soup-like recipes to endure the difficult
weather. Besides, these types of foods are easier to be prepared in uneven regions that the
people live in. For this reason, the recipe of the day is Jasha Maroo (Minced Chicken). This
dish is a traditional Bhutanese spicy chicken stew. Its main ingredient is the chicken,
together with a lot of seasoning using garlic, onions, and chilies. It is traditionally served with
rice as well.

Ingredients
• 500 grams of chicken
• 2 tablespoons of vegetable oil
• 3 cups of chicken stock
• 2 cloves garlic (crushed)
• 1 onion (sliced)
• 1 tomato (chopped)
• 2green chilies (cut into small pieces)
• 1/2 tablespoon of salt
• Ginger (crushed)
• Cilantro

Directions
Cut chicken into very small pieces about the size of peas. Pour the chicken stock. Place in a
saucepan and add water, 2 tablespoons of oil, and the tomatoes and bring to a boil. Add
garlic, onions, salt, and chilies to taste. Lower heat slightly and boil for another 5 – 10 mins
stirring occasionally. The dish should have some liquid when you’re done. Garnish with
ginger and cilantro. (Serves: 3 – 4)
