Red meat verses white meat

Red meats simply have more myoglobin, which are the cells that transport oxygen to muscles in
the bloodstream. The key difference between red and white meat is that red meat has
more myoglobin than white meat.

The biggest difference between the two is fat content. White meat is a leaner source of protein,
with a lower fat content. Red meat contains higher levels of fat, but also contains higher levels of
vitamins like iron, zinc and B vitamins. 

Red meat is red when it is raw and gets dark after it is cooked whereas White meat is meat that
has a pale color before and after cooking.

 Generally, red meat also refers to: Beef and veal, Mutton and lamb, Pork, Venison, Goat,
and Horse.
 While white meat refers to: Chicken, Turkey, Duck, Goose, Pheasant and Rabbit.
Rabbit Meat

 Rabbit meat is considered as white meat and has minimal fat content. It is also low in
calories and cholesterol-free. Compared to other meats, rabbit has less sodium and
contains a higher amount of metabolism, boasting phosphorus and calcium. Rabbit meat
is all white meat. Rabbit has 795 calories per pound. Compare chicken at 810, veal at
840, turkey at 1190, lamb at 1420, beef at 1440 and pork at 2050.

 Rabbit has the highest percentage of protein. Rabbit has a lower percentage of fat than
chicken, turkey, beef, or pork with unsaturated fatty acids at 63% of the total fatty acids.
The cholesterol level in rabbit meat is much lower than chicken, turkey, beef, pork.
 The U.S. Department of Agriculture has stated that domestic rabbit meat is the most
nutritious meat known to man. Research shows that rabbit meat has been recommended
for special diets such as for heart disease patients, diets for the elderly, low sodium diets,
and weight reduction diets. Rabbit meat helps stomach disorders.
 Rabbit is not a readily found protein and is considered to be the most easily digested meat
on the planet and works great for clients with allergies. Rabbit meat is 99% fat free, and
is said to resemble the flavor and texture of free range chicken.
