The main element of the Strombo-


li system is the Venturi nozzle above
the pipe bundle heat exchanger. The
wort supplied by a pump from the
bottom through the central ascend-
ing pipe results in a vacuum at the
outside of the Venturi nozzle which
supports the wort flow in the pipe
bundle. This provides for homogene-
ous treatment and even mixture of
the kettle volume.
The circulation pump allows for an
intensified wort flow in the boil-
er pipes so that the heat transfer at
the heating surface is increased. This
allows for reduced temperatures from
the means used for heating and thus
for reduced thermal stressing of the

Method of operation

The wort in the kettle is uniformly

the heating pipes of the tube-bun-
dle heat exchanger. Any undesired
pulsating, which is one of the main
causes of fouling, is thus prevented in

Method of operation

The wort cycle between the ket-


tle and the external boiler is supple-
mented by a jet pump with down-
stream wort spreader in the wort
kettle. Wort-mixing in the kettle is
better because of the jet pump, and
the wort spreader ensures there is
a large area available for the evap-
oration process. The large heating
area of the external boiler allows for
very small temperature differences
between the heat area and the wort
and this in turn means lower tem-
peratures are needed for the heating
process. Besides being able to use the
external boiler system for different
brew sizes, two wort kettles can be
