Food Safety Standard in Australia is based upon the principle that food safety is best ensured
through the identification and control of hazards in the production, manufacturing and handling
of food as described in the Hazard Analysis and Critical Control Point (HACCP) system, adopted
by the joint WHO/FAO Codex Alimentarius Commission, rather than relying on end product
standards alone. This standard enables States and Territories to require food businesses to
implement a food safety program based upon the HACCP concepts. The food safety program is
to be implemented and reviewed by the food business, and is subject to periodic audit by a
suitably qualified food safety auditor.

Risk, Penalties, and Consequences of Non-Compliance

The chief legal officer of the Star Entertainment Group informed a senior executive that
there was an "intolerable risk" that Suncity, a notorious junket tour company, was
laundering money within its Sydney casino. The May 2018 warning, however, went
unheeded, according to the probe into Star's NSW license, and Star allowed Suncity to
operate a private gaming salon at the Pyrmont casino for more than a year after evidence
of shady cash dealings surfaced. SGR employs the 'Protecht' Compliance and Risk
Management System to store incident reports, breach reports, and compliance
requirements. For the purposes of NSW and Queensland Liquor and Security legislation,
this database also functions as an Electronic Incident Register. This Incident and Breach
reporting system provides reports and graphs of records and trends, which are used to
advise SGR Management and the Board of Directors of compliance issues inside SGR.
