Step. 3
To start with, In a large pot, place the chicken, corn, chicken
broth, cilantro, onions, garlic, salt and pepper.
Second, Add the water and boil, then reduce heat to
medium and cook for 30 to 35 minutes, until chicken is
cooked and tender.
After that, Continue cooking the corn for about 15 more
minutes. Put away the onions and then add red potatoes,
white potatoes, and the guascas. Cook for 15 more minutes.
Meanwhile, Cut the chicken meat into small pieces and
return to the pot. Serve the Ajiaco with capers and heavy
cream on the side.
Afterwards, Uncover and add the frozen papa criolla and
reduce heat for 15 minutes, add salt and pepper to your
taste.
At the end, Remove the chicken and place in another plate.
