SALAK PLIEK U

Salak Pliek U is one of Aceh's old culinary delights that is still in great demand by the
Acehnese people as a snack on the way. The snack is often a gift to be enjoyed together while
sitting relaxed with the family. This culinary is a hereditary recipe from ancestors, made from
salak fruit that has been chopped and soaked with salt water for 12 hours then mixed with Pliek
U or patarana. Pliek U is old coconut fermented for several days. After peeling and removing the
water, the coconut flesh is left for two days so that it is soft due to the process of breaking down
starch by bacteria. Then, the coconut is measured, stored and stirred by hand so that the
decomposition is evenly distributed every day for a week. Then, the coconut is dried in just two
days to extract oil so that it becomes a residue. The pulp is then roasted to be used as a basic
spice for the making of Pliek U sauce, a type of Acehnese curry. Meanwhile, for Salak Pliek U,
so that the taste sensation to be more tasty, delicious and long-lasting, salak is packaged in a
separate form with the Pliek U seasoning combined with sugar, salt and cayenne pepper then
ready to be marketed. Salak Pliek U is one of the potentials for the people of Aceh that is being
developed. Its existence has now begun to reappear, not only in Padang Tiji but in other areas in
Aceh.

The beginning of the development of salak pliek U culinary is from Bandar Dua District,
which is the easternmost District of Pidie Jaya Regency. Then spread to Ulim District until
finally mushrooming throughout Pidie Jaya. There are several selling points, namely on the edge
of the Banda Aceh-Medan road, precisely in Balee Ulim, Ulim District. Then spread also in the
center of the city of Meureudu to the District Trienggadeng, and there may be many other places
that are increasing every time.

Long before being sold to the public, salak pliek salad has been known for generations by
families in villages in Aceh. Previously, the raw material was salak bitter which could not be
eaten without a mixture of seasonings. In the past, the spices were dried pliek (patarana), salt,
cayenne pepper and sugar which were then made into salak lalapan seasoning. Usually salak
pliek is processed during the day and is enjoyed while having a small huddle with neighbors.

spice for cooking vegetables to be made into gravy (curry). Vegetables used such as young
melinjo fruit, melinjo leaves, long beans, peanuts, young jackfruit, young papaya, bamboo shoots
and young eggplants. Acehnese also have their own way to enjoy the pliek u by becoming a
snack material that is eaten with fresh fruits such as salak.

Increasing and decreasing interest is a common thing in a culinary business. Matching


taste and creativity creating new things is the most important point in developing the culinary
world. But even more important is to preserve the special characteristics of the region, popular
prices, hygienic properties of micin, and utilize the products of the lower classes. Hopefully in
the future there will be new culinary delights that continue to enrich the culinary diversity of
Aceh.

Now, salak pliek is one of the culinary which has been sold to the public and is loved by
people across the class. Seasoning is added with brown sugar and peanuts, so that the salad
seasoning is increasingly similar to ordinary salad, the thing that distinguishes it is the addition
of pliek as the dominant seasoning. The pliek used is dry but does not taste special. Nor does it
still contain obvious oils. For this reason, the pliek is not sold on the market, so a special request
must be made, or just make an instant pliek which is different from the one made for the purpose
of extracting coconut oil. Minced zalacca, including the seeds, are stirred in chopped herbs. The
price varies between 5000 to 10,000 / portion. This salad can be found in several places in
Bireuen, the easiest location to find is on the road that connects Bireuen City and Cot Girek
