Assessment 1 - Project
Scenario 1

You have been asked by the CEO of Bart’s Catering Co (BCC) to review the
following issues of the company. The CEO wants you to find out the best
practices and benchmarks of other companies and see how BCC can achieve
sustainable practices.

CURRENT ISSUES:

• a) Food waste is being thrown away.


• b) Paper usage is exceptionally high.

Having done your research, this is what you find out about the company’s
current practices.

CURRENT PRACTICES:

• a) Food Waste are being thrown out with general waste. They are
not disposed of in compost bins or recycling bins.
• b) Current data for paper usage as follows:
• ▪ 2015: 20 reams at $2.99 per ream
• ▪ 2016: 25 reams at $3.99 per ream
• ▪ 2017: 35 reams at $4.99 per ream

NB: BCC is currently using Reflex paper from Office works. Each ream is
$4.99.

Task 1

In order for you to develop sustainability policies and procedures for BCC,
you will need to research at least three (3) other organisations’ sustainability
policies and practices and compliance requirements.

A list of possible organisations to use as a benchmark that you may refer to

From the research, you will be required to create a report (min 500 words)
that outlines and compares the sustainability practices, policies and
compliance requirements of each organisation you have selected from the
above list. This will provide you with the scope to establish a set of
sustainability goals for BCC.
THE COMPASS GROUP

GTA environmental certifications are held by many of the Compass Group's facilities. This
includes recommendations for waste recycling, stock control to reduce waste, stove gas use
where possible, low-flow nozzles on all taps and baths, and the use of recyclable materials
whenever possible. This process uses significantly fewer harmful agents and far less energy than
traditional cleaning and sanitation. The goal is to raise awareness about throwaway products and
provide more lasting and environmentally friendly alternatives, with some sites proactively
recycling items such as bottles, papers, and polymers to prevent waste. The saved, or rather

the GAIARecycle Rubbish Dehumidifier, which decomposes and ferments garbage. It produces

SPOTLESS

years, with up to 25% of carbon food consequences. Coca-Cola is seeking clarity from
manufacturers and farmers. They advocate for waste-to-packaging efficiency and sustainable
farming. CC is assisting nations or organizations in Australia that have recently been hit by forest
fires and natural disasters. This notion does not strive to alter the status quo or provide respite;
rather, it encourages governments and international organizations to actively engage in
environmental awareness. The "Waste-Free World" initiative has gradually been utilized
virtually entirely. It relates to the packaging and manufacturing of items. Despite the fact that 88
percent of the container is reusable, only 10% of the CC packaging is recycled into PET.
Approximately 20% of CC packaging is reused internationally. CC wants to change its recycling
policies. The goal is to significantly increase the proportion. CC is aiming to develop
infrastructures, container variety, waste disposal, and collection centers at its many sites
throughout the world to achieve this goal. Coca-Cola has a significant detrimental impact on
water access, filtration, and sanitation! The environment and society contribute 60% of a finished
beverage, as does the freshwater used in its production. The Waters Management Project is
expected to offer a good example for the community in terms of water protection. It promotes
sustainable water use and guarantees that everyone has access to safe drinking water.

Task 2

Using the information given in the scenario relating to issues BCC is


facing. Consult with 2 other students on how you would document the
information given on paper usage for BCC.

You will need to generate a report ensuring the following points are covered:

• ▪ Total amount of resource used over the 3 years


• ▪ Total cost of resource used for each year
• ▪ What improvements can be made to reduce the usage of
paper by 50% from the previous year.
• ▪ Use S.M.A.R.T. goals as a tool set the targets you would like to
achieve in reducing paper usage.

BCC must improve inventory and food management in order to reduce


food waste. He began sorting biowaste from organic waste and compost

2. What tools and technology can you use to measure,
evaluate and monitor usage.
3. Outline the planned actions/tasks to be undertaken
4. Allocate responsibility for improvement activities to relevant
people in your organisation
5. Set realistic time-frames for the completion of tasks
6. Monitor, measure and report on the effectiveness of the
improvements
7. Identify further opportunities for improvements.
1. BCC has dealt with issues such as food waste and extremely high paper consumption.
However, because the present ideas are new, it is vital for the organization to follow them
in order to save money and increase long-term protection. Improving the effectiveness of
procedures and resources in the work areas of workforces can be improved by providing
them with guidance and recommendations, as well as aiding them in carrying out policies
in the most efficient manner possible. Employee and management collaboration on ideas
can also benefit in the identification of possible policy development areas.
2. A wide range of tools and features are available to assess, analyze, and track usage. For
starters, the Food Waste Management Cost Calculator (FWMCC) may be used to
estimate the cost of food waste disposal. Decreasing the number of suppliers, donating,
recycling garbage, and reusing lubricants are all examples. Aside from being
environmentally friendly, this calculator reveals that it is perfect for businesses because it
is incredibly precise depending on how much information the corporation has about its
current solid waste management expenses. Second, BCC can utilize paper tracking waste
logs to keep track of waste quantity waste. These two resources can be found on the
internet.
3. Furthermore, the existing recommendations will serve as a reference for action plans and
duties. It would be simple and clear for employees to understand, such as composting or
recycling food waste, employing electronic storage, and purchasing recycled office
supplies. The key thing to remember is to not squander too much, if at all.

use a large amount of paper to print important documents will take a bit longer to finish
their tasks.
6. Managers from each industry can also review and evaluate the effects of adjustments.

by sending an email to a higher-ranking person within the organization.
