soup is simply God-sent. But sometimes, tomato soup is just—well—tomato soup and can
get bland and boring very quickly. To combat this, I found some nice and simple ways to add
a little bit of dazzle to the everyday fix.
ADD GREENS
Topping your bowl with a handful of salad greens adds colour and freshness to your meal.
Toss your greens with a simple vinaigrette first and you’ll have the ultimate one-bowl
soup-and-salad supper.
SEASONINGS!
In addition to the fresh ingredients, add a few other seasonings to your taste. We love
adding salt and pepper, but you could also add some red pepper flakes or chilli powder for
an added kick. Experiment with different seasonings!
TOASTED NUTS!
This can work with any nuts you have on hand. You can try dukkah -a spice-packed Middle
Eastern nut and seed blend- or keep it simple by toasting one nut or seed, like almonds and
hazelnuts. Adding a spice (such as paprika or cumin) to the mix adds more flavour to your
bowl and the result is a pretty garnish with a nice crunchy texture.
OR SPICY SAUSAGE
If you'd prefer a meatier approach, try sautéing hot Italian sausage in the pot before pouring
in the soup. Simmer until the sausage is cooked and the soup is infused with rich, spicy
flavour. Finish with fresh basil and a sprinkling of Parmesan.
OR SOMETHING FISHY
Want a taste of the sea? Try making a quick cioppino by adding fresh crab, garlic, and fresh
herbs to the prepared tomato soup. Have some celery or fennel? Add that in too!
DRIZZLE WITH FLAVOURED OIL
Another quick way to add a ton of depth to your bowl is with a drizzle of flavoured oil. Don't
have any on hand? Follow this easy method to make a flavour-packed garlic oil in less than
5 minutes:
Combine 1/2 cup olive oil, 4 medium crushed garlic cloves, and 1 to 1 1/2 tsp. of your
favourite herb or spice (such as crushed red pepper flake, cumin, or dried oregano) in a
small sauté pan. Gently warm over medium-low heat, stirring often, until the garlic is crispy
and golden brown and the aromatics release their fragrance, about 3-5 minutes. The finished
oil can be stored in an airtight container, refrigerated, for up to 1 month.
OR FLAVOURED CREAM
If you prefer a creamy tomato soup, try adding a flavoured cream instead of (or in addition
to) that oil. For maximum richness, try a Parmesan cream—that's heavy cream that's been
enhanced with the salty goodness of Parmesan cheese. For something lighter, go for a herb
cream, such as a tangy chive sour cream or a bright and refreshing lemon cream.
ADD CROUTONS
If you’re tired of serving bread alongside your soup, try topping it with hearty croutons
instead. Toast or grill a few pieces of rustic bread, or fry leftover bread in brown butter for a
nutty, toasted flavour before cubing.
FINALLY, CHEESE!
The most classic of toppings for tomato soup, a simple shaving of Parmesan or Pecorino
cheese—along with a few cracks of fresh black pepper—is really all you need to elevate a
bowl from basic to stunningly delicious.
Note that due to the heavy cream, this recipe can be a little bit heavy! You could try and use
half and half instead of the heavy cream and 1% milk instead of 2% milk.

● 2 tbsp olive oil
● 1/4 cup fresh basil, minced
● 1 Tablespoon minced garlic
● 1/3 can stewed tomatoes
● Black Pepper (to taste)
