A. Origin of the Food Service Industry
Early inns provide healthy food and local drinks as part of their service to travelers. It
was only later that food and drink became a specialty service when independent
restaurants and pubs opened to cater to locals and travelers alike. The earliest type of
restaurant was the coffee shop, which emerged in England in the mid 1600s. In the
18th century, there were about 3000 coffee shops in London alone.
B. Type of Food and Beverage
 Institutional Catering
- Institutional catering is a food program for volumes of people eating together at the
same time, like in factories, business house, hospitals, schools, etc.
- The origins of institutional catering are in factory meal programs.
 Airline Catering
- Airline Catering may be classified into Airport Catering and Flight Catering
- Airport Catering – involves food outles that are self-service, waiter service, vending
machines and licensed bard. They may be run by the airport authority or by
outsourced catering establishments.
- Flight Catering – is a specialized program for passengers in planes. Food is served in
difficult conditions in narrow confines and especially when there is air turbulence.
 Ship Catering
- Ship Catering – is almost like catering in a hotel. It is a food program on board in
sailing vessels.
- The challenge in cruise liners is the ability of stocking an storing the right provisions
and raw materials.
 Railway Catering
- Railway Catering – can vary from fresh food provided to passengers.
