The easiest way to dip your toes into
brewing NA beer is often referred to Dry Hops
as Nanny State, after a NA beer from 50 g Cascade - 7 days
Brew Dog. Basically this method 50 g Centennial - 7 days
involves a tiny grain bill that’s full of 37.5 g Columbus - 7 days
low diastatic specialty grains. 25 g Ahtanum - 7 days
25 g Simcoe - 7 days
This recipe was inspired by the
Nanny State recipe available on Directions
brewdog.com. This is a pretty straightforward brew
day. Mill your grains as normal and
Batch Size: 6 gallons mash with your full water volume at
Efficiency: 72.5 156F or 69C for 30 minutes. Don’t
Original Gravity: 1.007 forget to add the mash hops. After
Final Gravity: 1.002 30 minutes, mash out at 170F or 77C
ABV: .5% for 10 minutes then yank the grains
and bring the wort to a boil.
Water Profile
Ca2+ 140 When the wort begins to boil add
Mg2+ 18 the first boil additions and boil for
Na+ 25 30 minutes. Add your flame out
Cl 55 addition after 30 minutes, cool to
S042- 299 pitching temperature, and transfer
HCO3- 109 to your fermenter.
