Related Learning Outcomes
By the end of this session, students are expected
to be able to:
• Recognize importance of food additive applications in
food products and food manufacturing
• Review the range of additives, which are used to
improve organoleptic properties of food.
• Overview the food additives which are used to improve
or maintain nutritional value of food, and to maintain
quality and extend shelf life of foods.
Lab Schedule

• Monday class: 4 FSN groups & 1 FT group


• Tuesday class: 5 FT groups
• All lab sessions are held offline, including presentation
(compulsory according to DIKTI)
• Different topic = different laboratory. Will be confirmed prior to
the sessions
• Any plan changes due to Covid situation will be confirmed later
*Topics and their sequence might be subject to change, for your goodness
Feel free to wear your favorite apron
Groupings
General Rules
• Fingerprint scanning must be done twice: check-in and check-
out with a maximum 15 minutes before or 30 minutes after the
scheduled class time.
• Examples:
a. Check-in : for classes that start at 9:00 am, checking-in can
be done from 8:45 am - 9:30 am.
b. Check-out: for classes that end at 9:30 a.m., checking-out
can be done from 9:15 a.m.-10:00 a.m.
• Make sure you see a successful-recording notice on the
fingerprint machine before lifting your finger from the machine.
General Rules
• < 30 mins = acceptable
Come after first 30 mins = will be marked as absent but you can
still join the lab
Come after first 60 mins = not allowed to join the lab
• Attendance 100% (expected), 80% (acceptable for exam)
• Check-in and –out → make sure the duration is 3 hours.

• Respect your classmates, lab assistants, lab coordinator


• LATE SUBMISSION: penalties apply. 8% per day up to 10 days.
After 10 days, it will not be assessed, unless you have a good
reason (e.g.: medical certificate)
• NO PLAGIARISM. Penalties apply.

Lab Journal
• Individual journal.
• Can be handwritten/ typed, anything that you're comfortable with and
good for your learning process. However, bear in mind that copy pasting
your fellows' work is unacceptable.
• Upload to Google drive provided.
• Contains:
– Title (5)
– Date (3)
– Aim (5)
– Principle related to the topic, brief only (22)
• Not allowed to copy paste from lab protocol
• You can paraphrase and add some important points
– Hypothesis (20)
– Materials & equipment (10)

• For Option 1: List ingredients (composition) in food/beverage products,
identify food additives in the ingredients list
• For Option 2: Identify the usage of specific food additives (can be used to
develop what food/ beverage products?)
