PROCESS FLOW FOR TRADIN ORGANIC WITH ACTION PLAN

1. RECEIPT OF RAW MATERIALS.


Our company receives walnut raw materials, mainly from our own organic orchards and
also from external providers using our own transport, which has a sanitary passport and
is tested for hygiene. Raw materials are pre-dried in the garden under natural conditions.
Each batch of raw material is carefully checked for organoleptic indicators (including the
condition of walnut surface, its integrity, the presence of living insects or traces of their
vital activity), and weighed. Relevant records are kept.
2. STORAGE OF RAW MATERIALS IN THE WAREHOUSE FOR RAW MATERIALS.
Raw materials are sent to the warehouse for raw materials, which has passed hygienic
treatment and disinfection.
The temperature and humidity of the air in the warehouse are controlled. Storage
conditions for walnuts in the warehouse: temperature - no more than 20 ° С, humidity -
no more than 70%.
A certified laboratory makes laboratory tests of raw materials from each garden, including
the presence of mold, aflatoxins. In case of non-conformity of the raw material, the
responsible personnel send it for storage to a special place in the warehouse with the
appropriate marking, and then disposes of it. Visual control of the quality of raw
materials for the presence of pests or their traces is required. The warehouse is equipped
with insecticidal lamps, pheromone traps, live traps. Relevant records are kept.
3. SPLITTING AND SEPARATING THE WALNUT KERNEL FROM THE SHELL
Trained personnel split the inshell nut on a splitter, weighs, and checks the moisture
content of the kernel using a verified moisture meter. Visual inspection of the walnut
kernels for the presence of pests or their traces. Relevant records are kept.

4. DRYING OF THE WALNUT KERNEL


The responsible for drying and a trained operator monitors the drying process of the
kernel in the drying chamber and re-checks the moisture content of the kernel after
drying. If the moisture content is more than 4.8%, the kernel is sent back to the drying
chamber. Visual control of the quality of raw materials for the presence of pests or their
traces. A responsible employee takes samples of walnut kernels from each lot for
shipment to a certified laboratory. Relevant records are kept.

5. CALIBRATION.
After that, the responsible operator sends the raw material to a vibrating sieve-calibrator,
with a mesh size of 18 mm, where the raw material is calibrated and loaded into special
containers according to fractions. Visual control of the quality of raw materials for the
presence of pests or their traces is required. Relevant records are kept.
 Additional actions:
- The product will pass through the air turbines 6 times.

6. OPTICAL AND MANUAL SORTING.


According to the flowchart, a trained operator sends the raw materials to laser and optical
sorters for sorting by color, size, separation of the kernel from shell fragments and foreign
bodies. After optical sorting, the raw material is sorted manually on an inspection
conveyor belt in the sorting and packaging area which is also equipped with magnets and
is checked for foreign bodies and pests. The temperature and humidity of the air in the
sorting and packaging area are being controlled. Then a final sieve control, passing
through a metal detector. Relevant records are kept.
 Additional actions:
- Additional visual control (product runs an additional time over the slowed down inspection
conveyor belt) of the quality of raw material for the presence of pests or their traces.
- Product runs an additional time over the Sortex inspection with a slowed down feeding.

7. PACKING AND PACKING OF WALNUT KERNELS.


Packing, packaging and labeling are carried out by trained personnel. Packaging
materials are supplied by certified companies. Finished products undergo random control
on the control table with registration of parameters.
 Additional actions:
1.1 Each batch of finished products for TO is checked on the control table with registration
of the following parameters:
- by organoleptic characteristics (appearance, taste),
- technical characteristics (% impurities, % moldy grains, % live insects, % infested insects),
- Tolerances (% shell particles, % small pieces, % dark color, % broken pieces, % without
peel).
2. Selective inspection of finished products for TO is increased from 2 boxes from each
pallet to 6 boxes from each pallet.
If foreign bodies are detected, including shells more than the norm declared in the
specifications, the entire batch is sent for processing.

8. STORAGE IN THE WAREHOUSE FOR FINISHED PRODUCTS.


The pallets with boxes are sent to the finished products cool warehouse with refrigeration
unit. Air temperature and humidity are controlled. Regular control of the warehouse for
the presence of pests or their traces. Relevant records are kept.

9 TRANSPORTATION TO THE CUSTOMER.


Finished products are delivered to the customer in refrigerated trucks, accompanied by
appropriate documentation.
 Additional actions:
- Quality checks prior to delivery to TO are included in the annual program and will be
performed regularly.
