Instructions:

In a medium bowl, combine the chicken with soy sauce, Shaoxing wine, and cornstarch. Mix well
and let it marinate for 30 minutes. Marinating the chicken will ensure that it is tender and
flavorful.

In a wok or large skillet, heat the oil over high heat. The high heat will help to cook the chicken
quickly and ensure that it is crispy on the outside.

Add the garlic, green onions, Sichuan peppercorns, and dried red chilies to the wok. Stir-fry for
1-2 minutes or until fragrant. These aromatic ingredients will add depth and complexity to the
dish.
Add the chicken to the wok and stir-fry for 5-6 minutes or until golden brown. Stir-frying the
chicken at high heat will help to cook it quickly and evenly.

Add the roasted peanuts to the wok and stir-fry for another minute or two. The peanuts will add
a nice crunch to the dish and complement the spicy flavors.

Add the sugar, salt, and pepper to the wok and stir well. The sugar will balance out the spiciness
of the dish and add a slight sweetness.

Continue to stir-fry the ingredients for another 1-2 minutes, making sure that everything is well
combined.

Remove the Kung Pao Chicken from the heat and serve hot with steamed rice. Garnish with
additional chopped green onions or sesame seeds, if desired.
