Introduction
Brining is a food preparation technique that involves soaking meat or plant
product in a salt and water solution before cooking it, usually as a way to
improve its tenderness and flavour.
It is said that soaking potatoes in salt water for some time before cooking them
in a deep fryer makes them crispier.

Goal
You will investigate how soaking potato strips in different concentrations of
brine affects the crispness of french fries

Role:
You are a Michelin chef at a five star restaurant and are investigating the optimal
concentration of brine solution to use for soaking raw potato strips when making
crispy fries

Audience:
Junior chefs at a fast food restaurant

Situation:
You have been asked to demonstrate the process of making crispiest potato
fries to a fast food restaurant.

Product: Evidenced based lab report as context for a Recipe for crispiest french
fry
