LIST UP RAW MATERIAL USED

1) POTATO CHIP
- Potato
- Vegetable oil
- Antioxidants BHT and BHA
- Flavoured seasoning

2) SALTED EGG POWDER


- Salted egg powder
- Curry leaves
- Chilli padi
- Flavoured seasoning ( zero non-sugar, salt)

The most raw materials that used in this production is potato. Potato is the primary raw
material used in this manufacture. A crop with great production, robust adaptation,
widespread distribution, high nutritional value, and high economic worth is the potato. Potato
always used in industrial raw materials cause it easy to get and high of level vitamins and
minerals. Potato can provide potassium, pantothenic acid, vitamin E, vitamin C, vitamin B6
and manganese. For the seasoning of the potato chip,
PROCESSING STEP

WASHING
- Fresh potatoes that is collected at the farm is cleaning by using roll cage washing machine. this
machine helps to remove the sand and other other dirt that sticks at the surface of the potatoes.

PEELING
- After washing the potatoes, the potatoes is peeling by using potato rumbler. Potato rumbler is an
industrial grade electric potato peeler. In order to quickly peel and wash potatoes so they are ready
for cooking or other preparation, potato rumblers work by rapidly rotating potatoes and water in a
sizable abrasive-lined drum.

TRIMMING
This process is done to isolate potatoes that do not follow the standards that have been set for the
production of potatoes chip. The potatoes should not have bug, mildbew and shapethe irregular
ones.

POTATO SLICING
- By putting all the washed potatoes in the potato slicing machine, the potatoes is thinly sliced.

BLANCHING
- Blanching foods helps reduce quality loss over time. Potatoes were blanching by immersed into
water. This steps helps to prevent the enzymes actions which otherwise cause loss of flavor, color
and texture and also prevent the potatoes from become sluggish.

POTATO CHIPS DEHYDRATING


- The potatoes slice was put into food dehydrator to remove the excess water. This steps helps to
reduce the amount of time spent frying while increasing the amount of oil in the finished product.

POTATO CHIP FRYING


- The potato slices put into the vegetable oil at a constant temperature. The temperature that was
used is about 180°C untill 200°C.
POTATO CHIPS DEOILING
- After finishing frying, the potato chips was deoiling by using vibrating deoiling machine to
remove the oil from the surface of the chips. The potato chips will contain less oil and can be more
crispy and tasty.

POTATO CHIPS FLAVORING


The potato chips was flavored by salted egg powder by using seasoning machine.

POTATO CHIPS COOLING


-Before packing, the flavored potato chips was cooling into the room temperature.

WEIGHING AND PACKAGING


For the last step of proccesing potato chips, the product is weigh and packet it by using aluminium
plastic composite bag vacuum-nitrogen packaging.
