They have a variety of uses, as well as health and


nutritional benefits. The uses of coconuts range from cooking and nutrition to skin health, cancer
prevention, beauty products, and fuel.

Coconuts are considered to be fruit with a variety of uses. The edible fleshy part of the coconut is
one of its softest parts, yet it requires considerable effort to remove it from the coconut shell. Several
approaches are proposed to remove the flesh of the coconut more safely and easily. The approaches
can be classified as manual, semi-automatic and automatic, corresponding respectively to the manual
scraper, semi-automatic scraper, and automated scrapers. This paper’s objective was to design an
automated scraper that will reduce time and effort, and be more safe and efficient when compared
to the manual and semi-automatic scrapers. The design incorporates two stepper motors, a DC
motor, a scraping blade mechanism, a clamping mechanism, a scissor mechanism, scraper frames,
bushings, pulley systems, clamp arms, a tightening rod and the control circuit. A detailed description of
the components, the modules, and the mechanism used to develop the automated system is
provided. The coconut clamp was designed to grip various sizes or shapes of half-shell de-husked
coconuts.

Coconut is widely used in food Industry within industrial food plants as well as at homes. Scraping
coconuts is quite a time consuming task. Manually doing so requires a lot of efforts and is not so
economical. The automated coconut scraping machine research project provides fine scraped coconut
as desired for food preparation and requires no manual effort. It also does this work in a fraction of
time. The system uses a shaft with holder to hold half cut coconut in place. This holder shaft is held in
place by mounts designed for it. Also a frame is made to hold the entire mechanism. On the other side
has another shaft that is mounted horizontally with scraping tool attached to it at one end. At the other
end it has a motor attached to the shaft. The motor is powered by our electrical circuit to move the
scraper tool and the coconut can be pushed against it to achieve coconut scraping in a short time
without much manual effort.

Coconut milk is the liquid obtained by manual or mechanical squeezing of grated coconut meat resulting
in rich white liquids. The demand for dairy products is rapidly on the increase resulting in insufficient
fresh milk. The need to improve agricultural food production through innovative research necessitates
the design, fabrication and performance evaluation of a coconut milk extracting machine that will
substitute the ever increasing demand of dairy products by primary and secondary consumers. The
machine was fabricated using local materials that are available, easy to operate, serviceable and
maintainable. The hygiene of the milk extracted was ensured using a stainless steel material that could
be scrupulously clean after every extraction. The performance of the machine was evaluated by varying
the operating speeds at 500, 400, 300 and 200 rpm using a variable speed electric motor. These speeds
were measured with a tachometer to ensure an accurate speed output. Extraction time of 5, 10, 15 and
20 minutes were selected using a digital stop watch. Results reveal that optimum machine performance
produces 210 g milk at an operating speed and extraction time of 200 rpm and 20 minutes respectively.
The quantity of the milk extracted was found to be dependent on the operating speed of the extractor
and the extraction time. The quantity of milk extracted increases with extraction time but decreases
with an increase in operating speed indicating that milk extraction is best achieved at a relatively low
speed. The recommended operating speed and extraction time of this machine during the test
conducted is 200 rpm at 20 minutes will yield 210 g of coconut milk.(Jean et al., 2017).

operate, serviceable and maintainable due to the use of local available materials at affordable costs.
The materials selected for fabrication will not contaminate the extracted milk. The machine is
powered by a 2 hp variable speed electric motor. Performance of the machine reveals that it
can extracts 210 g of milk at an operating speed and extraction time of 200 rpm and 20 minutes
respectively. The machine can be used for small and medium scale milk production to encourage
agricultural food production in Nigeria

coastal ecosystems around the world (Young et al.,2020)

The coconut palm for thousands of years have been widely used, transported and planted by
humans for a variety of purposes, including food, drink, fibre, fuel andaesthetic value (Young et al.,
2016).

Every part of the coconut tree and its fruit can either be consumed by humans, animals or converted
into other valuable products. It can be processed into a variety of foods and beverages; the edible
part of the fruit i.e. meat and water is called the endosperm tissue. 

The coconut industry is capable of producing two basic types of valuable products from coconuts
for food uses the traditional coconut oil and the newer coconut protein. Traditionally, the majority of
coconut protein is recovered and used in the form of coconut milk (Sukoncheun, 2017).

Coconut milk is the natural oil-in-water emulsion extracted from the grated mature meat. It
contains a large proportion of lauric acid, a saturated fat that raises blood cholesterol levels and
has about 54% moisture, 35% fat and 11% solid non-fat (Raghavendra and Raghavarao, 2020).

Coconut milk is the liquid obtained by manual or mechanical squeezing of grated coconut meat
with some hot water resulting in rich white liquids that closely look like cow milk. Coconut milk has
a long-standing cultural association with health in the Ayurveda tradition (Kabara, 2017)

This natural drink is usually recommended for maintaining electrolyte balance and can also be used
in case of dehydration. It was recorded that in the United States coconut milk was one of the
major sources of dietary fat, aside from dairy and animal fats (Dayrit, 2018).

The long history of usage and the diverse studies done to characterize and define the
composition of the various components of the coconut tree, its fruit and related products derived
from it, established the coconut’s uniqueness and superiority among agricultural crops. If properly
utilized, the coconut has the highest economic value among the palm family. It is on this basis that
this Development and Performance Evaluation of a Coconut Milk Extracting Machine research project
looked into the design, fabrication and performance evaluation of a coconut milk machine to
supplement the ever increasing demand for milk in the country.(Hui et al., 2019).
