In Fig.1: Two fatty acids. Notice that the unsaturated fatty acid has a double bond in the carbon
chain. What might a polyunsaturated fatty acid look like?

In Fig.2: Forming a trigylceride involves combining three fatty acids with an alcohol called glycerol.
Notice that a water molecule is formed as each of the three fatty acids is attached to the glycerol.
