Carabeef

 Carabaos came from the Malays and Chinese back 300 B.C. (mainly for laboring purposes in the
fields)
 Because of the decline of the population of native carabaos from the World War II, PCC
(Philippine Carabao Center) initiated to cross breed the native ones with foreign buffaloes
(American, Brazilian, Italian, etc.) to improve the milk and meat quality of the carabaos (Delgado
2022).
 More than 5,500 foreign breeds of buffaloes were imported to the Philippines in 1994
 Following this action by the PCC, they also set sanctuaries to protect the breed of native
carabaos (Delgado 2022)
 Is considered to be a healthier alternative to beef because of its low cholesterol content being
40% less (Padre 2016), and 10% less in fat (Marcelo 2018, Padre 2016), making it famous to
consumers.
 Stunning is the first step in slaughtering carabaos, and there are several ways for this procedure;
1.) percussion/ captive bolt pistol stunning, 2.) electrical stunning, 3.) gas stunning, or 4.) using
an axe or knife (unrecommended) (Marcelo 2018).
 The carabaos are given a bath and are isolated a whole day before slaughtering
 The “seven-eleven” rule in choosing carabaos to slaughter is commonly followed; male carabaos
should be seven years of age while female carabaos should be eleven years of age. There’s also
a variation of this rule which is the “nine-eleven” rule. Nine years for the males, and still eleven
years for the females.
 Production of carabeef varies per slaughterhouse. No. of produced carabeef usually rises during
fiestas.

Using the same wok, put the used soup stock in cooking the miki in the wok in low heat.

Chicken liver – added after sautéing the garlic

Karahay/Bagnet, Longganisa – prepared beforehand and added before serving

Hotdog – can be cooked with the vegetables in the cooking process or prepared beforehand

Chicharong Bulaklak – Added before serving
