The financial section will cover the financial aspects of the business.

This section will include


future projections in sales; the estimated amount of money that will be required to open the business; a
pro-forma balance sheet for the first month of business; anticipated income statements for the first year
of the business; year one and year two balance sheets and the strategy if an exit from the business was
necessary.

Financially speaking, the business will require a large initial investment. This is the case because
for the first two months of renting the space for the business, there will be no sales due to long set up
times. Therefore, it is predicted that $47 251 will be spent before the restaurant is open for business.
This is a pie graph that shows where the $47 251 is being spent.

The bowls will be purchased directly from the supplier which will allow for a better price. Since
health and safety of our customers is the number one priority, the refrigerator/walk in cooler will be top
standards; therefore, more money will be put towards it. Tables and chairs will also be purchased from
the supplier and because of the size of the restaurant, the price for tables and chairs will be quite low.
The remaining money will be spent on renting the building, renovating the location and equipment
required to run the kitchen.

This table represents the expected revenue and per month expenses for the restaurant in the
first year of opening. Note that expenses do not account for money spent before the opening of the
business. It is only the money spent during the first year of operating the business.

The bar graph represents the projected amount of money earned from sales in the first five
years of operations.

The large amount of growth from year to year can be contributed to the expected demand for
the product to increase. With the pandemic beginning to come to a relative end, more people will no
longer be working from home, which gives the company for potential customers.

Exit strategy for the business will be quite simple. It will be attempted to be sold at the market
value. If there is no market for the business, the equipment will get liquidated. The money received from
the sale will go to paying any outstanding debt.

Product Plan

The product speaks for itself. Each salad is made fresh each day with nothing being prepared
days ahead of time. The menu consists of have five basic salads, each having its own unique spin off, and
then one salad of the day which will change each day. The salad of the day will give customers a unique
experience each time they return to the restaurant. The five basic salads will be all be briefly described
in the following paragraphs.

The classic salad that can be found in almost every restaurant is the Caesar salad. This Caesar
salad has some interesting twists to it though. The four traditional ingredients will be present; however,
they will be topped with an in house made creamy dressing. The dressing is unlike any other on the
market and is made without the use of raw eggs, so there are no worries about Salmonella.

The next item on the list is a Kale salad which is served dripping in carrot ginger sauce. The
carrot ginger sauce is made each day in the kitchen. This option may sound like a weird combination, but
it will not feel like that after you try it.
A healthy change of pace is next with the healthy taco salad. The salad is made a supplement of
meat as it is made with Shiitake mushrooms and ground walnuts instead of hamburger. It is topped with
a perfectly crafted cilantro lime dressing. It sounds like a lot all packed in one, but it truly invokes your
taste buds.

The next futured item is a grilled potato salad with scallion vinaigrette. Red onions and
blueberries are placed on top of the grilled potato to add an extra level of flavor to the salad. It is truly a
great way to start each morning.

The final main item on the menu is a festive fruit salad. Just like how it sounds, each piece of
fruit in the salad will be cut into festive shapes. To go along with the festive shapes, there will be just
over seven different fruits in each salad. It is a great choice for a dark dinged day to lift up your spirits.

The Leafy Greens is not a one-dimensional business, as they also serve a small variety of coffees.
Having coffee on the menu will give another reason for people to choose Leafy Greens over other local
establishments. Most coffee shops only sell coffee and small snacks; however, this establishment will
sell coffee, small snacks, and a full array of healthy muffins.

Since the focus of the restaurant is on salad, there will only be a few muffins available, but the
ones that are available will be top of the line. On most days, the muffin menu will consist of three
different flavours.

The most outgoing muffin on the menu is the cranberry orange muffin. This muffin is made with
the use of organic cranberries and white whole wheat flour. The final step is to zest the muffin with an
orange zest.

The other two remaining muffins will be changing each day to the keep the customers engaged
in the product. If one certain muffin is requested, there will be swift changes to make sure that the
customers can continually have the best products.

The Leafy Greens will sell solely organic foods that are made by limiting the use of fossil fuels.
This will give customers the healthiest and freshest meals possible. Each salad that is produced will have
its contents be as fresh as possible. Maintaining this promise will give the Leafy Greens the biggest
competitive advantage over any restaurant in New Brunswick.

The creativeness of the menu will add a huge competitive advantage. There is no place in Saint
John that has a menu quite like the one at the Leafy Greens. Each dish has a unique taste and vibrant
colour scheme that makes every bite taste that much better. The overall atmosphere of the restaurant
will be a big reason why people choose to eat at the Leafy Greens.

The café like atmosphere will bring people trying to relax before their day of work or people
who are just trying to put the final touches on a project, flocking over to the restaurant. These people all
want a place that is lively and bursting with vivid lighting. Leafy Greens delivers all of what the
customers want.
