Chickpea omelette

Ingredients
2 cups chickpea flour
3 tbsp ground flaxseed
1 tbsp baking powder Measurements

1 tsp cumin 1 cup = 250 mL


1 teaspoon (tsp) = 5 mL
1 tsp salt
1 tablespoon (tbsp) = 15 mL
1 tsp turmeric
3 tbsp nutritional yeast
Freshly ground black pepper to taste
Directions
1. Combine all the ingredients in an airtight container.

2. When ready to cook, take ½ cup of the dry mixture and mix with ½ cup water.

3. Heat a small pan and lightly spray it with olive oil.

4. Add the mixture to the pan, cover with a lid and let cook for about 4 minutes. Once
you see many bubbles forming on top (similar to when cooking pancakes), turn the
omelette over and let the other side cook for about another 4 minutes. Both sides
should be golden in color.

5. Serve by stuffing with any kind of sauteed vegetables (mushrooms, peppers, onions,
etc.).
