Traditional African rice

Ingredients:

 cup of oil (any desired type)

 of a small onion, sliced
2
 1 clove of garlic, about 6 cardamom, and powdered cumin all ground together
 2 sticks of cinnamon
 5 cups of rice, rinsed
 Food coloring (red or orange)
 1 cup sweet peas
 2 Tbs Vegeta or salt
 1 Tbs whole black pepper

Directions
1. Turn stove on high.
2. Add the oil to a 4 quart pot on the stove.
3. Add the mixture of ingredients (garlic, cardamom,
and cumin).
4. Add two sticks of cinnamon.
5. Mix all ingredients together with the oil in the pot.
6. Add the 5 cups of rice.
7. Stir the rice with the ingredients.
8. Add 7 cups of hot water; turn heat to medium.
9. Add 2 Tbs of Vegeta (all-purpose seasoning).
10. Add 1 Tbs of whole black peppers to add additional flavor and spice.
11. Stir the rice again; stir every five minutes until rice is fully cooked.

12. Take tsp rice and feel with finger to see if it is soft and does not have a crunchy center.

13. Take 1 tsp orange or red food coloring mix with cup of water.

14. Add the food coloring in a corner of the rice while in the pot.
15. Meanwhile; take a small pot add 3 cups of water with 1 cup of sweet peas; cook for three
minutes.
16. To garnish the rice, take 1 Tbs where the orange or red food coloring was applied (place the
colored rice on top of the white rice); then add the sweet peas.(As a guideline, the plate should
be 80% white rice, 10% red or orange rice, and 10% sweet peas. )
