Abstract
Baking, in itself, goes back at least a thousand years. The use of enclosed
ovens, to produce bread and pastry, was probably introduced by European explorers
and colonizers. It plays a very important role in Filipino food culture, with our love for
breads and various kakanin. Similar to many aspects of Philippine life, our history as a
baking country is comprised of influences from many different cultures. From there,
baking have contributed a lot to the economy of the country and provided more job
opportunities. It became part and partial of growing up Filipino.
Importance of baked goods in Philippine tradition is undeniable. With so many
foreign influences that made their mark in how baking developed in the Philippines. Still
most of the Bread and Pastry industry started from family training. Though baked goods
had been affected by the increase and decrease in the price of flour, sugar and lard,
then recipes should be adjusted to meet the needs of different situations. That is why,
this study is conducted to provide reasons how people of Surallah started their Bread and
Pastry Business, how they battle with the ups and down of the business, also how the industry
contribute to the economy of the said municipality. Before this study was conducted, the
researcher secures permits from the Municipality Mayor and to the person in charge of the each
establishment.

Introduction

A bakery is an establishment that produces and sells flour-based food baked in


an oven such as bread, cookies, cakes, pastries, and pies. Some retail bakeries are
also cafés, serving coffee and tea to customers who wish to consume the baked
goods on the premises. Putting up bakery business needs consideration of many
factors like food safety, hygiene and housekeeping, drainage, electrical supply, water
supply, sustainability, business permits, Flexibility, workforce and labor issues.(ABA and
Alexandra Kirsten)
Surallah is a 1st class municipality in the province of South Cotabato, Philippines.
According to the 2015 census, it has a population of 84,539 people. This became the
reason why many businessmen choose to invest and put up a business here, including
baker business.
This research aims to provide information to the readers who want to put up
bakery business by sharing to them about the common challenges they might encounter
and stories behind success of Surallah bakers.

Statement of the Problem

Generally, this study deals with Bread and Pastry Challenges and Success

Stories: A Live Experience Surallah Bakers.

Specifically, it aims to answer the following question:

1. What brings them to the bread and pastry business?


2. In what way they are contributing to the economy and lives of their staff and
costumers?
3. How they battle with the ups and down of the business
4. What are some issues and concerns in Bread and Pastries Industries?

Methodology

In-depth interview were used in this study where in the researcher conducted
intensive individual interviews with survey questionnaire based on

owners, staff and persons in charge of the operations on bakeshops in Surallah,South
Cotabato.The interview was conducted from the month of December and January
wherein bread industry was at its peak season. This method enable us to ask question
about how they started in Bread and Pastry Industries and their experiences on how
they battle with the challenges encountered in the business.The data are presented in
graphical and textual presentation.

Result and Discussion

Study shows that most of the Bread and Pastry Industries originated from the
family training having the percentage of 71 % and 29% started the business as
corporation because they felt that the community needed it.
Most of Bread and Pastry Business at Surallah started from family traditions that soon
becomes a business because the recipes that are being passed to them from their
grandmothers and grandfathers. Some of them started from group of friends’ that are
graduates of related courses and decided to put the business also to practice their
skills. Same reasons are reported by Philstar.com2013 survey released establishments
for 2010 reached more than 16,000. Increasingly enough, manufacturers of bread,
cakes, pies and other bake products. That mostly started as family business and other
because of the Filipinos that come together and do business.

Results shows that the economic contribution of bread and Pastry industries
have greatly contributed to economy because of the correct paying of tax , followed
by the reasons that the business provide job opportunity to the people in community
and that have helped the workers family and it also gives life for other industries to
put up business beside their stores.
This implies that the charges impose by the government on their citizens and
businesses as means of raising revenue, which is then used to meet their budgetary
demands. This includes financing government and public projects as well as making
the business environment in the country conducive for economic growth of the
country. In terms of employment generation it ranked second with 74,406 workers
among other sub-classes in the manufacturing industries. (According to Annual
Survey of the Philippines Business and Industries, 2013)

Data revealed that the main reason why bread and pastry industry experience
low income it’s because of the increase in the price of the three main ingredients in
making breads which is the Flour, sugar and lard.
Cakes, pastries, pies and similar perishable bakery products are 90% made up
of flour, sugar and shortening. And with that baked goods have become the most
affected with the rising of the prices of ingredients in the Philippine Market .
This implies that the Annual Survey of the Philippines Business and Industries,
released by Philippine Statistics Authority in 2016, bread were accounted for the most
numbers of manufacturing establishments in the formal sector of the Philippine
Economy.

Result revealed that bread and pastry industries experience prosperity in the
business if the price of flour, sugar and lard would decrease. Also honest store keeper
is a factor why business experience prosperity.
This implies that experiencing prosperity and low income in bread and pastry
industry had been influenced by the rising and lowering of the basic ingredients in
baking like flour, sugar and lard in the market. Though the nature of the industry offers
limited scope for growth, changing consumer trends have recently been very important
in the bakery industry, which has resulted in a number of potential growth opportunities
for manufacturers. Increasing consumer demands for healthy, convenient and tasty food
has stimulated the bakery manufacturers to differentiate and innovate baked products,
in order to capitalize on these trends.(Arthi V., Baking Industry2007)

Conclusion

Therefore it is hereby concluded that most of the Bread and Pastry Industries
originated from a family business or from a corporation who felt that the community
needed it. The industry had greatly contributed to the economy by paying correct tax to
the local government and by providing job opportunities to the people in the community.
It is also concluded that the main reason why the Bread and Pastry Industry experience
low income because of the increase in the price of flour, sugar and lard which is the
main ingredients in making bread and pastry products., also they said to experience
prosperity in business if the same ingredients will decrease in price.

Recommendation

Due to the findings of the study, the researcher recommends the following:

1. The bakers should adjust the recipes to meet the needs of different situations.
2. Try to use the conversion factor method in their baking products.
3. Research of some products that can be a substitution to some expensive
ingredients but still with the same quality.

4. To the other researcher to have another study on why most of the baking
industries started from family business.
