Your Task:

Analyze the data you have collected. In a short memo report, to Paul Seguiti, present your
findings, discuss your conclusions, and make recommendations. You may want to present the
data using visual aids, but you also realize that you must emphasize the important findings by
presenting them in an easy to read list.

You work for Paul Seguiti, the owner of Seguiti Family Pizza; a small, casual pizza shop he
founded 30 years ago. Its signature items are eight-inch diameter individual pizzas. The no frill
eatery also serves, fries, onion rings and assorted beverages.

The pizza shop is located in the warehouse district of Chicago, where it originally served
truckers who delivered their meats, fruits and vegetables in the middle of the night and then
whisked off to the next city. Just for the truckers, Seguiti designed a pizza that was large enough
to be satisfying, yet small enough for a driver to fold in half and eat with one hand while driving
with the other hand. Later the pizza shop caught on with the students who studies late. The
shop opens at 11 pm and closes at 6 am.

The concept was a hit. However, success brings competition. Three imitators opened their
pizza shops with a 10-km radius of Seguiti family pizza. You know that the family has been using
the same system of delivering orders to customers that it has for years, and you know service
could be faster.

The current system at Seguiti's works as follows. a customer clerk records the customer's order
and table number on a ticket. The customer pays, and the counter person gives the orders to
the pizza makers. the pizza makers remove the dough from the refrigerator, shape it, add the
sauce and other ingredients, put the pie in the oven, and remove it from the oven when baked.
the counter clerk takes the order to the customer's table. The Seguiti Family Pizza has three
counter clerks, two pizza makers, and one cash register that is shared by the counter clerks. it
takes two minutes to prep a pizza before it can go in the oven. The pizza shops use an old-
fashioned pizza deck oven which cooks a pizza in eight minutes.

You think the entire system is inefficient, and when you discuss the problem with Mr. Seguiti,
he says, "Although the old ways are comfortable for me, I see that change is needed."

You suggest observing the three-competitor’s method of serving customers to understand why
their service is faster. currently, the average time it takes a customer to receive an order at
