Ingredients:

1 1/5 (kg) Rice

2 tablespoons garlic

1 tablespoon cumin

½ tablespoon pepper

Salt to taste

½ litre oil

3 tablespoons Misto

1 chicken

3 tablespoons Sacha culantro and ancho oregano

6 eggs

1 tablespoon Ground dried oregano

1 tablespoon Ajino moto.

15 bijao and straw leaves

Preparation:

First cook the rice with little salt and less water than usual, because it does not have to cook much.

Then fry the misto with the garlic, cumin, pepper, ground oregano and then add the chicken, stir
and add water and leave it to cook.

Once the rice is ready, let it cool down, when it is cold add the juice where the chicken was
cooked, add the eggs and the dried oregano.

Blend the sacha culantro and the oregano and fry it in a frying pan with misto, cumin, pepper and
garlic, add this mixture to the rice.

Mix everything together and add salt and garlic. Add the bijao leaves.

Then place the bijao leaf on top of the rice, place the chicken in the middle, cover it with more rice
and wrap it up; tie it with straw.

Then all the juanes are placed in a large pot and boiling water is added, it is cooked for 2 to 2 and a
half hours.
