Pan-Seared Flat Iron Steak in giant Skillet for Mother's Day 2023

Ingredients

flat iron steaks


2 T canola oil

Your favorite steak seasoning or rub (I use St. Elmo’s)

Mix the next ingredients together in a bowl and set aside.


½ T fresh rosemary
½ T Fresh thyme
4 T room temp butter
3 cloves garlic, minced

Instructions

Moderately season the steaks with the seasoning/rub on both sides. Then let sit for 30 minutes on the
counter to come to room temperature.

Heat a cast iron pan to medium high heat for 5 minutes till thoroughly hot and then add the oil. Put
the steaks in the pan and cook for 3-4 minutes, not moving.

After 3-4 minutes, quickly remove steak to plate, RAW side down, drop the butter mixture in the hot
skillet and allow to melt for 20 seconds then return the steaks to the pan uncooked side down and
continue for another 3-4 minutes depending on desired doneness.

Baste the steaks a couple of times. Medium rare is about 135° but it will continue to cook while
resting. Don’t cook beyond medium or you will be disappointed.

After the steak has rested 5 to 10 minutes, thinly slice against the grain and serve.

--- Our steaks need 2-3 minutes per side max. Ma's will need 3-5 minutes per side depending
on thickness of steaks. Just start Ma's first so they all come out together before the butter step.
Check when you think they are done and have removed them with digital thermometer. (120 to
130 for rare)
