CHAPTER 1

I.INTRODUCTION
Vegetables play an essential part in our food intake since they sustain the normal functioning of the
different body systems.It has also low amounts of fats and calories are also a good source of dietry
fibers{Andoy & Tapitan,2015].

Nutrition Advance defined leaty vegetables as the most nutritious of all vegetables. These vegetables are
simply the green leaves of a plant, and they are a significant source of essential vitamin and minerals and
offers low calories. One of the leafy vegetables commonly used as part of Filipino recipes is Pechay It is a
popular vegetable that grows and thrives in the Philippines and is also known internationally as Chinese
cabbage. In addition, it is favored by most oriental people for it is always available in the market anytime
of the year. It is also an important constituents of Filipino food such as "Pochero" and "nilaga.“ Pechay is
an upright, biennial herb, cultivated annually about 15-30cm tall in vegetable stage.Pechay Cookies are
unique and innovative product that combines the health benefits of pechay,a leafy green vegetable,with
the deliciousness of cookies.These cookies are made from a blend of pechay leaves, flour, sugar, and
other natural ingredients. They are low in calories, high in fiber, and packed with essential vitamins and
minerals. Pechay cookies are perfect for health- conscious individuals who want to indulge in tasty treats
without compromising their health. The research behind these cookies involves the exploration of the

1.2 OBJECTIVES
 1. To determine the optimal recipe and preparation method for pechay cookies in terms of taste,
texture, and nutritional value.

 2. To investigate the market potential and consumer acceptance of pechay cookies as a new
food product.

 3. To compare the nutritional benefits of pechav cookies with other snack options in the market.

 4.To explore the feasibility of using pechay as a main ingredients in cookies and its potential
impact on the environment and food sustainability.

 5.To identify potential challenges in the production and distribution of pechay cookies and
develop strategies to address them.
FEATURES
PRODUCT NAME: RJJC Pechaylicious Bites

The product name was derived from: PECHAY- from the word PECHAY the main ingredients.

the combination of “pechay” and “delicious” which implies that the product is both healthy and tasty.

The use of the word “bites” in the product name suggest that the product is small and easy to eat
and appealing snack option for people who are looking for a healthy and convenient snack.

PACKAGING: RJJC Pechaylicious Bites will be sealed in a windowed box.the logo will be printed on a
white paper with some information about the product such as ingredients and the nutritional facts.

LOGO:

The idea of having this logo is to make the product more attractive to the customers.
RJJC is the product owner.PECHAYlicious is colored green and brown which indicates the
color of pechay and the color brown portrays as natural and organic product.BITES is
colored red indicates the ripeness and sweetness of the product.
Since the product is Cookie made out of pechay then an image of bite cookie and the leaf
of pechay is also included in the logo. The ingredients,Nutritive contents and contact
number are also in the logo.the image of ingredients are placed in the logo so that the
customers would easily recognized the raw materials used in the product.the weight of
the product is also included.
