Ingredients:

1. Chicken
2. Fish sauce
3. Lemongrass
4. Kaffir lime
5. Galanghal
6. Thai chili (optional)
7. Water
8. Coconut milk
9. Lemon/lime
10. Salt (optional)
Steps:
1. Boil the water and smash the lemon grass in it.
2. Slice the galanghal for 3-4 pieces and put it in the water.
3. As well as the kaffir lime (Peel the leave and drop it in)
Step 1-3 make sure everything is smashed so that we have the real aroma

4. Put the chicken in


5. Add a bit of salt (optional)
6. Pour coconut milk when the chicken is cooked
7. Lower the heat, do not let it boil. Make sure the colour is nice and white.
8. When it is fully cooked, we mix it in another soup bowl

In another soup bowl:


1. Squeeze the lemon or lime in
2. Pour the fish sauce
( The lemon needs to be twice of the fish sauce, for example if you have 2 tbsp of fish sauce,
lemon needs to be 4 tbsp)
3. Chop the chilli in (optional)
4. Pour the soup in the bowl
Ready to serve hot in winter. Eat with Jasmine rice.
