Lucia Cunanan of Angeles, also known as “Aling Lucing,” has been credited
with reinventing sisig by grilling the pig’s ears, and using the cheeks as well.
[10] The Philippine Department of Tourism has acknowledged that her
“Aling Lucing’s” restaurant had established Angeles as the “Sisig Capital of the
Philippines” in 1974.[11] Cunanan’s trademark sisig was developed in mid-
1974 when she served a concoction of grilled and chopped pig ears and
cheeks seasoned with vinegar, calamansi juice, chopped onions and chicken
liver and served in hot plates. Today, varieties include sisig ala pizzailo, pork
combination, green mussels or tahong, mixed seafood, ostrich sisig, crocodile
sisig, spicy python, frog sisig and tokwa’t baboy, among others.

Sisig has gained so much attention through the years. Even the most beloved
chef, the late Anthony Bourdain, claimed it to win the hearts and minds of
the world. The Kapampangan term sisig literally means to snack on
something sour and in the province, it actually refers to sour, unripe fruits.
Lucia Cunanan, also known as Aling Lucing, re-invented the dish by grilling
pig heads and added some onions and vinegar. Since then, Aling Lucing sisig
has been sought after by many people.

Today, it’s popularly served beyond Pampanga on a sizzling plate usually


topped with raw egg. Many people want it paired with beer as it is also a
favorite partner with rice. A number of variations have also been made from
chicken to tuna sisig. Even the original sisig recipe has evolved with some
adding other ingredients like mayonnaise. Aling Lucing sisig is one dish you

town of Guagua and became a destination snack area in the province. The Halo-Halo
consists only of 3 main ingredients namely Macapuno, Saging, and Leche Flan. Critic says
that the simple concoction is the secret recipe for the taste and success of Razon’s Halo-
Halo. And now, it is helm as the BEST Halo-Halo in the country.

Razon’s By Glenn is headed by its President Mark Anthony “Glenn” Razon-Carreon. Glenn
is a 3rd generation Razon who is born and raised in Guagua, Pampanga and opened his first
store in Tarlac City, Tarlac in 2003, under the trade name The Original Razon’s Halo-Halo
& Palabok.

Under his management with the company tagline “Tradition of Delight” he has
standardized, innovated and aspired to bring the brand at par with the food industry. In
2015, Glenn has started franchising and rebranded his company to what is now known as
Razon’s By Glenn (RBG). Glenn aims to bring the brand to a wider market by creating its
unique “Razon’s By Glenn” menu and experience by offering affordable, quality and
delicious food.

I really love the overall simplicity of Razon’s Halo-Halo. If I were to describe the taste, I will
oddly say “honest” because of its pure heavenly goodness. The presence of only 3 main
ingredients make you focus on the uniqueness each can offer. Everything dances well in
harmony creating a memorable halo-halo experience.

Another thing that I really appreciate regarding the halo-halo of Razon’s is the quality of
the crushed ice. You will enjoy how it smoothly and easily melts in your mouth.
