Maxilact® LGi vs LG
DSM is changing the Maxilact® portfolio to raise the overall quality standard
• The core of the Maxilact® product range consists of Maxilact® LGi, LGX and LAGX.
• Since the introduction of Maxilact® LGi in 2013, customers have confirmed a
consistent equal or better performance of Maxilact® LGi compared to Maxilact® LG.
• Maxilact® LG does not provide any benefits over Maxilact® LGi or LGX. Therefore it
has been decided to discontinue the LG range per January 1st 2016

Clean flavor expert


• The shelf life of lactose-free products can be limited because of
taste deterioration.
• During extensive scientific research, DSM found that arylsulfatase –
a common impurity in lactase preparations - is causing this off-
flavor by converting a natural component in milk (s-cresol).
• This patented technology has enabled us to develop arylsulfatase-
free Maxilact®.

para-cresol
s-cresol, naturally occuring in milk, is converted in
p-cresol by arylsulfatase. p-cresol is a component
also present in pig odor and human sweat.

Invertase free Maxilact® LGi

• Invertase is a common lactase


impurity:
– It breaks down sugar
(sucrose) into fructose
and glucose.
– This changes the
ingredient composition.
– It can result in changes in
texture, sugar taste or
mouth feel during shelf
life.
• Maxilact® LGi improves
product stability over shelf
life in sugared lactose-free
dairy products.

Sweetness enhancement explained


• Natural enzyme Maxilact® breaks down lactose into better digestible and sweeter
forms of sugar. These components have a higher relative sweetness than lactose.
• This allows for a sugar reduction of 1-2g /100g of yogurt
• Maxilact® range contains unique products specifically suited for natural sweetness
enhancement or sugar reduction.

Off-flavor test
• Introduction to specifications and COA for Maxilact® LGi, LGX and LAGX
• Application test in milk with trained panel to detect flavor defects
• Official DSM QC release test – if flavor defects are observed, batch will be blocked

Enterobacteriaceae
• Are considered superior to coliforms as
indicators of sanitation GMPs
• Coliforms are able to ferment lactose, while the
