Creamy Cooked Soy Yogurt Recipe:

Ingredients:

4 cups of fermented and strained soy milk

2 tablespoons of natural yogurt (as a starter)

2 tablespoons of cornstarch

Optional: sweetener (such as maple syrup or agave nectar), flavorings (such as vanilla extract), or cocoa
powder to taste

Instructions:

Prepare Fermented and Strained Soy Milk: Make sure you've already fermented and strained the soy
milk according to your earlier process.

Mix Cornstarch: In a small bowl, mix the cornstarch with a small amount of water to create a smooth
paste. This will help prevent lumps when adding it to the yogurt mixture.

Blend Ingredients: In a blender, combine the fermented and strained soy milk, natural yogurt, and the
cornstarch paste. Blend on high until the mixture is well combined and smooth.

Cook the Mixture: Pour the blended mixture into a saucepan and place it over medium heat. Stirring
continuously, heat the mixture until it starts to thicken. This will help activate the cornstarch and
contribute to the yogurt's thickness.

Cool and Flavor: Once the mixture has thickened, remove it from the heat and allow it to cool down to
around 105°F or 40°C. At this point, you can add any optional sweetener, flavorings, or cocoa powder to
taste. Mix well to ensure even distribution.
Inoculate with Starter: In a small bowl, mix 2 tablespoons of natural yogurt with a small amount of the
cooled yogurt mixture to create a smooth starter mixture. Add the starter mixture back into the rest of
the cooled yogurt mixture and whisk well to evenly distribute the starter culture.

Fermentation: Transfer the mixture to sterilized glass jars and follow the fermentation instructions
mentioned earlier. You can place the jars in a warm spot in your kitchen or use a small insulated cooler
to maintain a consistent temperature for fermentation.

Chill and Enjoy: After the fermentation period, let the jars cool to room temperature and then
refrigerate them for at least 4 hours or overnight to allow the yogurt to set further. Once chilled, your
thick soy yogurt is ready to be enjoyed.

This recipe involves cooking and the use of cornstarch to achieve a creamy and thick texture in your soy
yogurt. Feel free to adjust the quantities of cornstarch and other ingredients according to your taste
