TRU HONE OPERATING INSTRUCNONS
The Tru Hone knife sharpener does a professionaljob of sharpening knives, By fol-
lowing dre ouUined ins[uctions, knives willbe sharpened to meetyour professional
sbndards,

The Tru Hone comes completely assembled and ready to use, Place fte machine on
üe sbinless steelstand fig, 1.)and familiarize yourself with üe following oper-
(see
ating instructions, The machine should be approximately 36 to 40 inches (91 to
101 cm) above floor level.

HONING WHEEU BEVEL ADJ USTMENT


(Do prior to using machine)
The Tru Hone is capable of approximately 10 bevel/ angle settings wiü a new set
of honing wheels, Each h.rrn clockwise (-; of he Angle Knob decreases he over-
lap of tre honing wheels 1/ 16 inch(1,6mm), Each complete turn counterclockwise
Ù increases he overlap of úre honing wheels 1/ 16 inch(l,6mm).
Turnüe Angle Knob so üathe indicator mark lines up wiüt he Red Dot (see fig.
2). The Red Dot is always dre reference position for setting he honing wheel
overlap, From üe front of he Tru Hone, visually check he honing wheels for üre
proper overlap of approximately 3/ 16" lo Ll 4"
(4.75 to 6.3 mm), referred to as a 3 Bevelor 4
Bevel (see fig, 3),

lf üre honing wheels are not overlapped approximately 3/ 16" to 1/4' (4,75 to
6.3mm)wiü üe Angle Knob pointing to he Red Dot, use the following steps to set
he honing wheel overlap,

Turn he Angle Knob so üat he indicator mark lines up with he Red Dot (see fig,
2), Turn üre Angle Knob one complete turn clockwise þ
and stop athe Red Do[
Visually check he honing wheels for no overlap (slight separatjon), lf the honing
wheels are stilloverlapped wih ûre Angle Knob pointing to he Red Dot, repeatUre
previous step untiltre honing wheels are notoverlapped widt he Angle Knob point-
ing to the Red Dot (see fig, 4),

rated, his is referred to as üe 0 Bevel, The 0 Bevel is he sbrting position for set-
ting he honing wheel/ beveladjustnenl From the 0 Bevel, turn he Angle Knob one
complete h.rrn counterclockwise Ù and stop athe Red Dot, The honing wheels are
overlapped approximately 1/ 16" (1,6mm), This is referred to as the 1 Bevel (see
fig, s),

From $e L Bevel, turn he Angle Knob one complete furn counterclockwise Ù and
stop at $e Red Dot The honing wheels are overlapped approximately 1/ 8"
(3,2mm), This is referred to as $e 2 Bevel,

From üe 2 Bevel, turn he Angle Knob one complete Urn counterclockwise Ù and
sbp at üre Red Dot The honing wheels are overlapped approximately 3/ 16"
(4,75mm), This is referred to as he 3 Bevel,

From he 3 Bevel, turn he Angle Knob one complete Urn counterclockwise Ù and
stop at ûre Red Dot, The honing wheels are overlapped approximately 1/ 4"
(6.3mm), This is referred to as he 4 Bevel (see fig, 3).

For most knives used in mea[ poulty or fish cutting operations, he 3 or 4 Bevel
position (3/ 16' lo Ll4'overlap)(4,75 to 6,3mm) is used (see fig, 3),

Seldom are tre 1 or 2 Bevel positions used for sharpening wiü the exception of
some skinning and fillet knives,

For some blades such as cleavers or chopper blades, a higher number bevel posi-
tion may be bestsuch as a 5 or 6, Turn $e Angle Knob counterclockwise Ù he
appropriate number of Urns for he desired bevel position,

TECHNTQUES OF KNrFE SHARPENTNG

knife edge steadily across he honing
wheels at a smooür rate, approximately 1
to 3 seconds, depending on he lengh of
he knife blade. M aintain a firm and con-
sbnt pressure on he honing wheels as üe
knife is being drawn across hem. M ake
sure üre knife edge is always in conbct
wih all four honing wheels (see fig. 7,8,
& e),

SHARPEN IN G
Before sharpening a knife, be sure you are familiar with the previous instructions,

Press üe 0 n/ 0ff Switch to the 0 N position (the lightwill come on),

STEP 1 G RIN DIN G THE BEVEL (RED DO T)

Turn üe Angle Knob so hathe indicator mark lines up widt he


Red Dot, 3 or 4
Bevel position (3/ 16' to 1/ 4")(4,75 to 6,3mm)wheel overlap, Speed Contolset-
ting "7" (see fig, 11). For longer knives over 6" (15.2 cm) you may increase $e
speed above "T" and for smaller knives you may decrease the speed below "7".

sure, draw he knife across üe honing wheels and raise the handle as be tip
approaches ûre honing wheels, Repeat 4 times or m0re until he knife is sharp, lt
is imporbntto have a completely new edge before going to step 2.

STEP 2 STREN GTHEN IN G OR SETTIN G THE EDGE (W HITE DOT)

Turn üe Angle Knob clockwise (., to tfre W hite Dot (speed


setting remains
unchanged) (see fig, 12), Use U're same procedure as in Step 1 for drawing he
knife across the honing wheels, but do it only 2 times.

STEP 3 HO N IN G THE EDG E (BLUE DO T)

he Angle Knob clockwise L.r to he Blue Dot. Reduce dre speed to "3" on LC
Turn
& HC Models, The speed reduces automatically on HCA Models (see fig, 13),
Draw the blade drrough 2 tmes wiúr very slight pressure, At the completion of ûtis
step, he knife should be sharp enough to shave hair, lf üe edge is not satisfacto-
ry, repeat all ürree steps, After tre completion of dtis step, turn the Angle Knob
counterclockwise ç) back b üTe Red Dot to begin sharpening he next knife.

THIN N ING OR I.ENGTHEN IN G KN ¡FE BA/EL TO
REMOVE SHOUTDER BEHIND THE EDGE
This step may be done before or after sharpening the edge,

1, Rotate üre Angle Knob clockwise þ pastthe Blue Dot(5 o'clock position)to he
7 o'clock position, or slighdy past Honing wheels are slighdy overlapped (see fig,
14A & 148),

2, Settre speed at"7" or higher and draw tlle blade through the honing wheels 4
times or more untilhe shoulder is removecj,

3a, lf thinning is done after the edge is shatpcncd, h:rn the Angle Knob counter-
clockwise q) back to the Blue Do[ Rcducc Llre specd to "3" and draw the blade
hrough once or twice lightly to rehone crlçc.

3b, lf drinning is done before sharpcning, lrrrn the Angle Knob countcrclockwise Ù
back to the Red Dot to bcgin dre complete sharpenìng procedure,

Follow he same procedure as noted under the section entided 'SHARPEN lN G ", except
for steps L & 2 reduce the speed to '4' or "5',

TO RESTORE AN EDGE OR POINT


The Tru Hone is capable of putting a new pointon a knife and removing severe nicks or
chips.

W hen a knife blade to be sharpened has an eclge with nicks or chips, the honing wheels
should be brought into an exfeme overlap position, Turn the Angle Knob counterclock-
wise Ù until dre honing wheels are sel at approximatcly the B to 10 Bevels (see fig,
15). This will give an adverse angle suilablc for rcmoving tlre defecl.ive edge. Sethe
Speed Control between "7" and "10" and rcpeat drawing the knife across the honing
wheels untilthe defects are removed, Return the honing wheels t0 üìe 3 or 4 Bevelset-
ting and follow steps 1, 2, and 3 under "SllARPEN lN G' to sharpen the knife,

CARE OF HONING WHEEI-S
W ih he proper care he honing wheels should sharpen thousands of knives.

Proper care includes:

1, Cleaning he knives before sharpening,


2, Checking he honing wheels for the proper overlap,
3, Applying be proper pressure to the knite on the honing wheels.
4, lnverting he honing wheels periodically.
