Cook-chill Product Questionnaire Analysis and Evaluation

I have set most questions in a “checkbox” style, so interviewees can pick more than one choice. I
have gained 12 responses from teenagers in this form. There are 8 questions to the questionnaire.

Question 1. What cuisines do teenagers prefer most?

From the result, it shows that teenagers prefer Japanese and Italian food, maybe due to the iconic
dishes of these cuisines (sushi, ramen, pizza, pasta and more).

Question 2. What tastes do teenagers prefer most?

From the result, 83.3% of teenagers prefer savory food the most, 75% for sweet, since most of
dishes are built upon these basic tastes. I may choose to use some rather sweet ingredients to
form a savory dish (e.g., sweet tomatoes in a savory tomato sauce).
Question 3. What carbohydrates do teenagers prefer?

From the results, it shows that 66.7% students like rice, due to our Chinese culture and where we
are grown up from. However, there was a dramatic amount to pasta lovers - 83.3%, maybe due to
the different types of pasta and different textures, pasta can also be used in many different dishes.
I will consider making a pasta dish.

Question 4. What proteins do teenagers prefer?

From the results, 91.7% of teenagers would prefer chicken as their most preferrable protein
source. In a teenager point of view, chicken often refers to chicken wings, which are very tasty;
barbeque chicken thighs, which are smoky and very tender; the chicken breast, which can soak up
most flavorings and sauces; the chicken drumsticks and oysters, which can be used for fried
chicken (and man who doesn’t like good fried chicken). Chicken can be utilized in most dishes and
my dish may be a pasta chicken dish.

Question 5. What textures do teenagers prefer?

From the result, 83.3% and 75% of teenagers like tender and smooth textures. Teenagers like
their meat, surely. Tender just basically means cooked well meat and vegetables, and for smooth,
I am considering about a cream sauce.
Question 6. Are teenagers willing to try cook-chill products that they have not tasted in the
past?

The results shown a quite big gap. 25% percent of teenagers would not try new cook-chill products
and 25% will. From the research on the acceptance of cook-chill products from teenagers, I am
considering modifying a typical cook-chill product and just tune it to suit the preferences of
teenagers.

Question 7. What sauces do teenagers prefer?

The results have shown that 58.3% of teenagers prefer tomato sauce. Mayonnaise and Bolognese
has also been hot picks. I will try and not use tartar, mustard or other less popular sauces in my
cook-chill product.

Question 8. What desserts do teenager prefer?

I will take this dessert statistic as a reference to how my textures and flavors should be. The most
preferrable, cookies, it is fudgy and soft, which tells me that I should have this type of texture as
well in my cook-chill product.
Summary

First, with the pick of cuisine. Most teenagers picked Japanese and Italian cuisine. I think I
am going with Italian, which can complement most preferences from teenagers.

Secondly, the taste. It’s obvious from the questionnaire, I am going with savory dish.

Thirdly, carbohydrates and proteins. Most people picked pasta and chicken as their most
preferrable carbs and proteins. I will use both of the ingredients as they can complement each
other and other ingredients in dishes. I will be making a pasta chicken dish.

Fourthly, textures. Teenagers have picked smooth and tender textures, which can act as
my sauce for my pasta chicken dish. It should be a cream sauce with some cheese (who doesn’t
like cheese), but it may be difficult to take cheese to form a cook-chill frozen product.

Fifthly, the acceptance of cook-chill product within teenagers. From the results, I will modify
a typical cook-chill product (in this case pasta with sauce).

Lastly, the sauces teenagers prefer. Sadly, the dish in mind does not really use any of the
sauce teenagers prefer the most. But, I will avoid using mustard and less popular sauces.

Final Dish

My final dish will be Chicken Alfredo Penne Pasta

Here are some of my moderations and adjustments:

 From traditional spaghetti, I will use penne


 Rather than using milk, I will use cream to ensure a creamier and smoother sauce
 Rather than using chicken breast, I will use chicken thighs to ensure a more tender meat
since thighs are “bulletproof”.
 The only thing I am worried about is that if cheese can be used in cook-chill products, it
may not last long.
