Session 1

A. Welcoming the guest :


When wellcoming guest, explore
totally your smile, eye contact and

B. Escort guest to table


7. "Would you please follow me.
8. "Is the table be allright, sir ?"
9. " Would you please sit down
sir ” ( if guest say yes, ask what is
the name of the reservation )
10. “ what is the name of the
reservation “( jika belum reservation
tidak usah di tanya )

11. "Let me check it first. Your
table is ready, sir "
12. "Would you please follow me ,

SESSION TWO
C. Poùr ice water.

D. Present the menu.

E. Take the order
Before taking the order :
♧ introduce yourself.
♧ inform N/A. ( informasi kan ke
tamu menu yang tidak ready/ready )
♧ please ask guest to look at the
menu.

STEPS OF TAKING ORDER:


_ upselling ( we have special
cuisine namely chicken steak
( Grill ) and spesial drink orange
juice , would u like to try it ? )
_ write the order
_ repeat the order
_ inform delivery time
_ thank you
Note : we have to know how to write
it down the captain order.

SESSION 3 :

F. Serve the beverage.

_ lady is first served.


_ from the right of guest.
_ use tray.
_ clockwise
_ mention the name.

Note : ♡ if it is in a bottle, serve in


front of guest.
♡ Hold glass by the leg of
glass not the body of glass.

G. Adjust cutleries.
♤ from right and left guest.
♤ attention to hold cutleries.
( pegang bagian leher cutleries/alt
makan )
♤ use tray.

H. Serve bread and butter.


♤ from left of guest.
♤ use service spoon and fork.
♤ unclockwise.

I. Serve the food


_ lady first.
_ from right of guest.
_ no Tray
_ clockwise ( searah jarum jam )
_ mention the name of food.

Note : ♤ Hold the plate by the ed


ge of plate.
♤ find out the seat num
ber.
♤ for serving Soup, we
have to use round tray.

J : Clear the dirty plates.


( before clearing up plates, make
sure that all of guest on that table
has already finished eating )

SESSION 4 :
K. Scrumbing down.
_ use BnB plate and service
napkin.
_ from right and left of guest.
_ only glass & flower would
stay on the table.
L. Offer dessert and coffee.
_ Serve dessert from the right
Of guest.
_ make sure we set up the
the cutleries first before
dessert served.
_ after dessert served then we
serve coffee or tea.
_ please set up sugar bowl and
Fresh milk for coffee and wed
ge of lime for tea.

M. Check guest satisfaction.


Indirect and direct guest
satisfaction checking.
Direct Check :
by asking guest directly.
Indirect Check :
by filling the guest survey.

N. Prepare the bill.

payment method in restau
rant :

3. Room Charge.

O. Farewell the guest.
