STEPS IN ESCORTING/SEATING THE
GUEST
1. As the guest arrives, he/she informs the receptionist about his/her
reservations and upon checking with the reservation book, the guest
will be escorted to his reserved table by saying: “This way please.
(receptionist will outstretch his/her hands)
2. If the guest has no reservation, receptionist should ask the guest how
many seats are needed, and if the guest can be accommodated, the
waiter will be allocate tables for them.
3. If the receptionist is busy, the manager, head waiter or waiter can
lead the guest to their tables.
4. When they reach the tables, ask the guest: “Will this table be alright
for you, sir/ma’am?”
5. Assist the guest in seating, pull the chair and push it back gently .
 Good morning, Madam. A table for _?
 Do you have a table reservation?

 No reservation:

• That’s all right. May I have your name, please?


• Would you prefer the smoking or non-smoking area? 
• This way please. (Take the guest to a table. Converse with
the guests as you walk.)
• Is this table fine?
• Allow me (when pulling back a chair for the guest or
when presenting a napkin).
 Has a reservation:

• May I have your name, please? (How do you spell that, please?)
Check your reservation book and repeat the reservation back to
guest.
• This way please, Mr David. (Escort the guest to their table.
Converse with them as you walk.)
• Do you have any preference sir like ,sitting in a smoking or non-
smoking area or near the window etc.
• Allow me, Mr. David (when pulling back a chair for the guest or
when presenting a napkin).
 Ask about special need. For example there is a child in the group
then ask guest whether the baby needs any high chair or not.
LEAD THE GUEST TO THE TABLE
• Maintain eye contact throughout, keep smiling and
escort the guest to the table by saying “This way please
Mr./Mrs. or Sir/Madam”
• Show the way by walking in front of the guest
• Do not walk too fast. Maintain very small distant, not
more than one meter away from guest and look back at
the guest rapidly.
• While you would reach the table, say: “Will this table
be all right for you, Mr./Mrs./Ms or Sir/ Madam”
HELP THE GUEST WHILE SEATING
• In a courteous manner pull the chair out so that there
would be just enough space for the guest to enter.
• Lady Guest should be seated first with best view of the
restaurant, then the gentleman.
• While helping lady guest to be seated (if applicable)
stand behind the chair, push with two hands on the
chair shoulder and keep the right toe at the base of the
chair so that guest can seat comfortably.
• Help the kid to get into pull high chairs.
What NOT TO DO while seating a guest

•Seat gents before ladies.


•The rapid movement of the chair.
•Incorrect handling of the chair.
•Ordering guests where to sit.
•Show irritation due to indecisiveness of guests, as to where to sit.
•If there are empty chairs on the table, the guests are asked if they are
going to be joined by more people.
•If not then extra covers are removed.
•Once the guests are seated, napkin must be unfolded from the left
hand side and placed on guests’ lap without touching the guest and
ensuring that the arm is away from the guests’ face.
UNFOLDING THE NAPKIN

1. Position on the left side of the guest, using


the left hand pick up the napkin.
2. Unfold the napkin from its fold and say:
“Excuse me Sir/Ma'am, may I lay the napkin
on your lap?” and gently place it cross the
guest's lap.
3. Unfold the napkin of the ladies first.
SERVING/FILLING OF THE WATER GOBLET

1. Position on the right side of the guest, using right


hand, get the pitcher and a table napkin placed on your
left arm.
2. Pour the water onto the glass placed at the tip of the
knife, and say: “Excuse me sir/ma’am” (pour the water ¾
filled).
3. Move around the table pouring the water, serving the
host last.
4. Offer water throughout the entire meal or as required.

PRESENTING THE MENU

1. Position on the left side of the guest,bring n


order slip/docket writing pad and a pen.
2. Present the menu to the guest with the menu
open and say:“Excuse me sir/ma’am, May I
present the menu for your selection?”
3. Step back and wait for a while until the guest is
ready to order. Step back and ask: “May I now
take your order?”
TAKING THE ORDER
1. When the guests is ready to order, stand near the table, stand straight with both feet on the
floor.
2. Offer and explain the house specialties and menu enthusiastically by saying: “Would you
like to try the specialty of the house. It’s Chicken Marbella, I’m sure you’ll like it.” or “For a
starter, may I suggest/recommend our best selling appetizer, it’s smoked salmon.” or “Would
you like to try our hot steaming soup? You have a choice of Nido soup and Pumpkin soup.”
3. Make suggestions and offer alternatives. Ask the manner of preparation: “How would you
like your steak done, Is it rare, medium rare or well done?” or “What dressing would you like
to go with the salad, Thousand island dressing or Italian dressing?”
4. Take the order of th guest, ladies first before gentlemen, unless the host will order for the
group.
5. Write the order of the guest and repeat it accurately by saying: “I’ll repeat your order
sir/ma’am”,_____”Will that be all sir/ma’am?”Thank you sir/ma’am food will be served in 15
minutes.”
6. Always smile and be attentive.
