Kimchi, also spelled kimchee or gimchi, is a traditional fermented Korean side


dish that originated over 3000 years ago. It is made of vegetables with many
seasonings. In traditional preparation, kimchi was stored underground in jars
to keep cool during the summer months and unfrozen during the winter
months.

The process of making kimchi involves brining (salting) the vegetables to draw
out the water, which helps in preservation and allows the seasonings to
penetrate the food over time; the final salt concentration ranges from 2-5%.
Kimchi is typically fermented by 'wild cultures' naturally present on the
vegetables.

Kimchi is alive! Full of living, healthy good


bacteria, or probiotics that support the gut,
boost immunity, energize the body, and aid
digestion, it is believed to fight cancer, lower
cholesterol and regulate blood sugar.

Kimchi tastes sour, tangy, salty, spicy, and


pungent! It’s similar to sauerkraut in that it is
fermented cabbage, but kimchi is packed
with flavour, umami and a little (or a lot) of
heat! The fermentation process is what gives
kimchi its sour flavor.

Kimchi is naturally fermented; it is full of


healthy bacteria, good for the gut and good for immunity. But besides being a
healthy thing to incorporate into our diets, Kimchi adds so much flavour to
things we are already making at home!

HOW TO MAKE KIMCHI STEP BY STEP

Kimchi contains healthy bacteria and probiotics that aids in the digestion
process.

Step 1: Combine Salt & Partial Water

Here are the ingredients: 2 tablespoons sugar

1 napa cabbage 3 scallions, chopped

2 tablespoons salt ¼ medium onion, chopped

1 tablespoon sweet rice flour 3 cloves of garlic, minced

½ cup Korean chili pepper flakes ½ tsp of ginger, minced

4 tablespoon fish sauce 2½ cups water

Combine the salt and 1½ cups of water. Dissolve and set aside.

Step 2: Wash & Chop Cabbage

Wash and chop the


napa cabbage.

Step 3: Soak Cabbage in Salt Water

Soak the cabbage in salt water for 3-6 hours or until soft.

Step 4: Combine Flour & Remaining Water

In a small pot, combine the


sweet rice flour and 1 cup of water over medium heat. Stir until
thickened, about 5 minutes.

Step 5: Prepare Paste

In a bowl, combine the flour mixture, Korean chili pepper flakes, fish
sauce, and sugar. Let cool. Once cooled, mix the scallions, onions,
garlic, and ginger to the paste and mix.

Step 6: Rinse Cabbage

Once the cabbage is


soft, rinse it 3-4 times to remove the salt water thoroughly

Step 7: Combine Paste & Cabbage, Then Store in Jar to Ferment

Massage paste into the cabbage and store in a jar. Serve immediately if
you like fresh kimchi. If you like it more fermented; wait until it fits your
tastes.
