It is a type of
meatloaf made with ground meat (typically pork), vegetables, and a variety of seasonings. The mixture is
shaped into a log, wrapped in aluminum foil or plastic wrap, and then steamed or baked. Here's a basic
recipe for making Filipino embutido:
Ingredients:
1 pound ground pork (you can also use a combination of ground pork and ground beef)
2 eggs
Instructions:
Prepare the Embutido Mixture:
In a large mixing bowl, combine the ground pork, raisins, grated carrots, chopped bell peppers, sweet
pickle relish, grated cheese, green peas, chopped onions, minced garlic, and breadcrumbs.
Season the mixture with soy sauce, tomato sauce, salt, and pepper. Mix everything thoroughly to
distribute the flavors evenly.
Add Eggs:
Crack the eggs into the mixture and mix until well combined. The eggs act as binders for the embutido.
Lay out a sheet of aluminum foil or plastic wrap, and if you have banana leaves, place them on top for
added flavor and aroma.
Place a portion of the embutido mixture in the center of the foil or wrap and shape it into a log or
rectangular loaf. Roll and shape it tightly.
Steam or Bake:
If you have a steamer, place the embutido rolls in the steamer and steam for about 45 minutes to 1
hour. If you don't have a steamer, you can also use a large pot with a rack and cover, adding water to
create steam.
To bake, preheat your oven to 350°F (175°C). Place the wrapped embutido on a baking dish, and bake
for about 45 minutes to 1 hour or until the embutido is fully cooked. You can remove the foil or plastic
wrap for the last 15-20 minutes to brown the embutido.
Allow the embutido to cool for a few minutes before slicing. This makes it easier to cut into neat slices.
Serve:
Serve your embutido slices with your favorite dipping sauce, such as banana ketchup or a combination
of soy sauce and vinegar.
Embutido can be served hot or cold and is often a part of festive Filipino celebrations and gatherings.
