Chicken Cacciatore, or "Pollo alla Cacciatora" in Italian, is a classic Italian dish featuring chicken cooked

in a savory tomato sauce with onions, garlic, bell peppers, and herbs. Here's a simple recipe for Chicken
Cacciatore:

Ingredients:

 4 chicken thighs, bone-in and skin-on

 4 chicken drumsticks, bone-in and skin-on

 Salt and pepper to taste

 2 tablespoons olive oil

 1 onion, chopped

 3 cloves garlic, minced

 1 red bell pepper, sliced

 1 green bell pepper, sliced

 1 cup mushrooms, sliced

 1 can (14 ounces) diced tomatoes

 1/2 cup chicken broth

 1/2 cup dry red wine (optional)

 2 teaspoons dried oregano

 1 teaspoon dried thyme

 1 teaspoon dried rosemary

 1 bay leaf

 Chopped fresh parsley for garnish

Instructions:

1. Season the chicken thighs and drumsticks with salt and pepper.

2. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces
and brown them on all sides, about 5 minutes per side. Remove the chicken from the skillet and
set aside.

3. In the same skillet, add the chopped onion and sauté until softened, about 3-4 minutes. Add the
minced garlic and cook for another minute.

4. Add the sliced bell peppers and mushrooms to the skillet and cook until they begin to soften,
about 5 minutes.
5. Return the browned chicken pieces to the skillet. Pour in the diced tomatoes, chicken broth, and
red wine (if using). Add the dried oregano, thyme, rosemary, and bay leaf. Stir to combine.

6. Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let the chicken
simmer gently in the sauce for about 30-40 minutes, or until the chicken is cooked through and
tender, and the sauce has thickened.

7. Taste the sauce and adjust the seasoning with salt and pepper if necessary. Discard the bay leaf.

8. Garnish the Chicken Cacciatore with chopped fresh parsley before serving.

Serve the Chicken Cacciatore hot, accompanied by crusty bread or pasta, if desired. Enjoy your flavorful
