A. CHARACTERISTICS OF YOGURT

When selecting packaging materials for yogurt, various characteristics of the yogurt need to be
considered to ensure that the packaging preserves its freshness, quality, and safety.

Below are some characteristics of milk that should inform the choice of packaging materials:

1. Influence of Temperature: Unfavorable changes in the quality of yoghurt, which may occur during its
storage, depend considerably upon the after-acidification ability of culture, the extent and type of
contamination,the quality of packaging and the storage temperature above 0oC.

2. Influence of Air: The atmospheric oxygen and a low relative humidity of air may contribute to some
abiotic deterioration of yoghurt (oxidation,drying up of the surface). So the packaging must be well tight
and seal.

3. Influence of Light: Chemical changes in the milk fat occurring in the presence of gaseous oxygen and
catalyzed by light, lead to the so-called oxidized flavour. Under practical conditions the appearance of
the oxidized flavour in yoghurt can be prevented by using the packaging materials with a reduced light
permeability and by storing the product in dark.

4. Packaging Material : All packaging materials should be properly tested before use. Migration of the
soluble substances from the packaging materials into the product may occur depending on the type of
plastic materials, the time of contact with the product and the kind of fruit acids present in the product.

5. Period of Storage: The period of yoghurt storage before its consumption depends on so many factors.
Therefore, a reasonable effort should be made to produce yoghurt with a storage life of at least 3
weeks.

B. APPROPRIATE PACKAGING MATERIALS FOR YOGURT

Below are some of the most common packaging materials for yogurt:

1. Glass ceramic packaging: Glass bottles and ceramic jars have good gas barrier properties, which can
effectively prevent the yogurt from being oxidized and deteriorated. At the same time, it can prevent
the volatile substances in the yogurt from volatilizing into the atmosphere.
2. Plastic Packaging: There are three main types of plastic packaging for yogurt, HDPE bottles, PS, and
PET packaging. The smooth body of the HDPE bottle can be labeled with paper. It is usually used to
package sterilized fermented yogurt. The shelf life of this bottled yogurt is generally about 20 days and
needs to be refrigerated.

3. Composite material packaging: The composite yogurt packaging has good overall performance, heat
sealing effect, and printing effect. Moreover, the yogurt packaged with composite materials can not only
improve the yogurt quality but also extend its shelf life.

4. Ecolean Packaging: Ecolean material is an environmentally friendly packaging material with good
barrier properties. And the material can be gradually degraded in nature. The Ecolean pot packaging has
a good standing property, which reduces the space occupied.

5. Metal packaging: Metal packaging has good light barrier properties and oxygen barrier properties.
And the use of metal packaging ensures aseptic packaging and greatly extends the yogurt shelf life.

The choice of packaging material for yogurt depends on factors like market preferences, distribution
logistics, environmental considerations, and the desired shelf life of the product. Manufacturers may
choose different packaging options to meet the needs of various consumer segments and geographic
regions.
