Caramelized Pineapple

CARAMELIZED PINEAPPLE

Ingredients Total weight: ~ 210 g 100%

• Fresh pineapple 150 g 71%


• Sugar 40 g 19%
• Coconut oil 20 g 10%

1. Peel the pineapple and cut it into cubes 1x1 cm.

2. Put the sugar in a saucepan and cook the dry caramel


by bringing it to 180–185 °C / 355–365 °F on medium
heat until it becomes amber.

3. Add coconut oil and pineapple cubes into the caramel,


mix with a silicone spatula and cook for 3-5 minutes
until the caramel has melted and the liquid has
evaporated.

4. Strain the caramelized pineapple cubes and leave them


at room temperature for 30–60 minutes to cool down.

5. Use as a filling for your macarons.
