THIS IS A PBL CHEMISTRY PROJECT
FOR CHAPTER 7 : RATE OF REACTION

OBJECTIVE :
TO UNDERSTAND THE
REPRESENTATION OF HOW COOKING
FRIED FISH REPRESENTS THE RATE
OF REACTION EFFECT IN OUR DAILY
LIFE

WHAT IS THE RATE OF REACTION ?
RATE OF REACTION IS THE CHANGES OF QUANTITY
OF THE REACTANT PER UNIT TIME OR THE CHANGES
OF PRODUCT PER UNIT TIME

Content Question
1.How can size of reactant affect the rate of reaction ?

Increasing the surface area of a solid reactant increases the reaction rate. By increasing surface area, there
are more collisions per unit of time.

2.Is high temperature affect the speed of rate of reaction?

An increase in temperature will raise the average kinetic energy of the reactant molecules. Therefore, a
greater proportion of molecules will have the minimum energy necessary for an effective collision.

3.Why smaller pieces of food cooked faster than the larger pieces?

Several smaller particles have more surface area than one large particle. The more surface area that is
available for particles to collide, the faster the reaction will occur.

4. Why does food last longer when kept in a refrigerator?

Food cam go off due to different chemicals reacting with, or colliding with other molecules, in the food. A
fridge provides quite low temperatures, meaning fewer molecules have or higher. As there are fewer
molecules to create a reaction, the food is kept fresher.

5. Why is food cooked faster in a pressure cooker than in a frying pot?

Food cooked faster in a pressure cooker because the heat accumulated in the pressure cooker and build up
heat making the food cooks faster rather than frying pan where heat is release everywhere and there is
none build up pressure.

6. As a chef and businessman, how would you select the best cooking method and best earn
method?

As a chef and businessman , I would select Dry-heat cooking methods like stir-frying, pan-frying, deep-
frying, and sautéing rely on fats and oil to act as the cooking medium. In dry-heat methods that don’t use fat
—like grilling and roasting—food is cooked either by direct or indirect application of radiant heat. No liquid is
used, and any fat that is added during the cooking process is intended to add flavor and not to act as a
cooking medium. The end result is a highly flavored exterior and moist interior. This will cause lot of people
crazy about it thus will earn a lot of profit

7. . Why does reaction rate matter in life given an example? (Other than cooking)

Just like any other types of measurement, such as length, mass, and time, rate of reaction is playing a major
role in our daily life. It is crucial to optimize the rate of reaction to obtain the best performance of the
reaction. As an example , our body system consists lots of biological reactions. If a biochemical reaction in
our body is too fast or too slow, it can endanger our life, that’s why a medicine is developed to counter a
specific disease, it is crucial to optimize the rate of its effect in our body.

8. State three ways to express the rate of reaction.

- Concentration of liquid
- The decreased amount in reactant
- The greater the frequency of successful collisions between reactant particles, the greater the
reaction rate.
PROCEDURE

1. Wash the fish

2. Mix the ingredients with the fish

3. Heat up the pan and pour oil into it

4. Put the fish into the pan

5. Put the another fish into the pressure cooker and press it for 5
minutes

6. Wait until the fish inside the pan is fully cooked and use
tweezer to take it out

7. Wait for 5 minutes for the fish inside the pressure cooker to be
cooked and flip it back and press it for 2 minutes.

8. After 2 minutes , take out the fish using tweezers

9. Put the cooked fish into a plate

I only use money on buying fish since I already got the other
material and apparatus at my house

SELF REFLECTION
This project is fun and exciting as it help me to tighten
my bond between me and my guardian !

SAFETY PRECAUTION
This experiment is conduct on kitchen, therefore
- Be careful while using electric. Prevent from touching it with your wet
hands
- Be careful while turning on the stove
- Prevent water from contact to the oil
- Please be slowly while putting fish into the hot oil

during this project , not to forget my friends and
guardian who always help me and support when I
was running out of idea and cheer me up when I was
on the verge of letting this PBL opportunity go a
