Application Usage
The culture is primarily used for the production of Swiss-type cheeses, such as
Emmental, Gruyère, Greve and similar types where the typical propionic acid aroma
and eye formation are desired. The culture is normally applied in combination with
lactic cultures, such as Streptococcus thermophilus , Lactobacillus helveticus,
Lactobacillus delbrueckii subsp. bulgaricus and LD cultures. The culture ferments
lactate resulting in the formation of propionic and acetic acids and large amounts of
carbon dioxide. Propionic acid cultures grow slowly in milk and have a low proteolytic
activity.

Suggested dosage
5U culture is recommended to inoculate 5,000 to 25,000 l (11,350-57,000 lbs) milk
depending on the milk treatment, cheese technology, storage and size of cheese.

For Large size Propionic-type cheeses like Emmental, an average inoculation rate of 5U
for 10,000-25,000 l milk (22,700-57,000 lbs) is recommended.

For Small size Propionic -type cheeses like M aasdammer, an average inoculation rate of
5U for 5,000 to 10,000 l milk (11,350-23,000 lbs) is recommended.

However, specific usage rates should be determined experimentally before a new


application.

Directions for Use


Remove cultures from the freezer just prior to use. Sanitize the top of the pouch with
chlorine. Open the pouch and pour the freeze-dried product directly into the
pasteurized product using slow agitation. Agitate the mixture for 10-15 minutes to
distribute the culture evenly. The recommended incubation temperature is
dependent on the application in which the culture is used. For more information on
specific applications see our technical brochures and suggested recipes.

Range Cultures in this series include PS-1 and PS-4/PS-40 (frozen and freeze-dried) and PS-
2/PS-20 (frozen).

Storage and handling < -18 °C / < 0 °F

Shelf life At least 24 months from date of manufacture when stored according to
recommendations.
At +5°C (41°F) the shelf life is at least 6 weeks.

in Regulation 178/2002/EC. Propionic bacteria are generally recognized as safe and can
be used in food, however, for specific applications we recommend to consult national
legislation.

The product is intended for use in food.

Food Safety Good M anufacturing Practise (GM P) is implemented in all plants manufacturing Chr.
Hansen cultures. Chr. Hansen has made a risk assesment of microbiological, physical
and chemical risks in our manufacturing and distribution plants for dairy, wine and
meat cultures. Control points (CP´s) and Critical Control Points (CCP´s) are based on
the risk assesment. A HACCP team as well as HACCP plans are established for each
plant.
