Dates Cake:

Makes 8 large pieces


Preparation time: 45min

Ingredients:
18 dates
3/4 cup milk (for vegan you use almond milk)
3/4 cup sugar
1 cup all-purpose flour
1/2 cup oil
1 tsp baking soda
1 tsp cashews, walnuts(optional)
PS: If you use ‘baking powder’ instead of ‘baking soda’, cake becomes a bit harder.

Method:
Heat milk and dates for few minutes or microwave them so that dates become soft and help in grinding.
Remove the seeds. Add sugar and grind them to a smooth paste along with the milk in which it is soaked
in. Add oil and mix. Sieve together flour and baking soda. Add the flour one table spoon at a time and
mix slowly. Add the nuts and mix.

Preheat the oven at 350F. Bake the cake in a greased oven proof dish for 35-40min or till a knife inserted
in the cake comes out clean.

Bottle Gourd Halwa:


Preparation time: 45 – 50 min

Ingredients:

Washed, peeled and grated bottle gourd – 4 cups


Sugar – 1 cup
Condensed sweetened milk – ¼ cup.
Cardamom Powder – ¼ tsp
Ghee – 4 tbsp
Cashew – ¼ cup (cut into small pieces

Peel and grate bottle gourd. Take a pan, add ghee, cashew nuts,almonds,raisins, mix it well till they
change the colour, then add grated bottle gourd and mix it. Let it cook for about 5 to 10 minutes on
aslow flame and keep mixing it.
Then add Milk stir it, if you want to add colour to it, you can add green colour and keep mixing.
Now add sugar to it and mix. Then add Koya to it, keep mixing for 5 minutes.
Bottle Gourd halwa is ready to serve.
