Starches are further broken down into simpler sugars like maltose and glucose in the small intestine by pancreatic amylase and maltase. Proteins are broken down in the stomach by protease and in the small intestine by trypsin into smaller polypeptides and then further into dipeptides and amino acids which are absorbed into the bloodstream. Fats are emulsified in the small intestine and broken into fatty acids and glycerol which are absorbed by villi and transported to the lymphatic and circulatory systems.
