1.0 OBJECTIVE
This Environmental Monitoring Procedure aim to describe a systematic procedure for monitoring Temperature, Relative
Humidity, Microbiological Analysis, Water Analysis and Air Analysis in different areas of AP Printing & Packaging Inc. facility
and to the environmental condition shall be satisfactory during storage, dispensing and manufacturing of products.

2.0 SCOPE
This Environmental Monitoring Procedure will cover the following areas:

2.2 Quality Control Department
2.3 RM/ PM Warehouse
2.4 Finished Goods Warehouse

3.0 RESPONSIBILITIES
3.1 QA Analyst is responsible on Daily monitoring of temperature and humidity and perform ATP Swab Testing on
personnel hands, machine and finished good.
3.2 QC Head is responsible in ensuring proper monitoring of temperature and humidity and ATP Swab Testing is being
carried out as per GHPs requirements.
3.3 Maintenance and Technical Department are responsible in maintenance of machine and equipment.
3.4 Production Operator are responsible in cleaning and disinfection of machine, equipment and production area.
3.5 AP Printing & Packaging Personnel shall be responsible in performing proper hand washing
3.6 Utility Personnel are responsible in cleaning and disinfection of Hand Washing area and comfort rooms.

4.0 PRECAUTIONS
4.1 Thermo-Hygrometer
4.1.1 The Thermo-Hygrometer battery is accurately working.
4.1.2 Thermo- Hygrometer shall not be placed under direct airflow.

4.2 Luminometer
4.2.1 The battery of Luminometer shall be in full charge.
4.2.2 The 3M™ Clean-Trace™ Surface Swab Stick shall be within the expiry date 10 months from
manufacturing.
4.2.3 The 3M™ Clean-Trace™ Surface Swab Sticks shall be stored in cool and dry place (refrigerate)
4.2. 4 Do not touch the internal surfaces of the 3M™ Clean-Trace™ Surface test or the surface you are sampling as this
will contaminate the test, producing a false positive or failed result.

5.0 PROCEDURE

5.1.1 Thermo-Hygrometer calibration shall be updated.


5.1.2 Record the value of temperature and humidity on the screen of Thermo-Hygrometer.
5.1.3 Temperature and Relative Humidity Monitoring Sheet shall be posted at the location where facility is being
monitored by department supervisor or team leader and shall verified by QA Analyst.
5.1.4 Temperature and Relative Humidity is recorded every four (4) hours per shift in the following areas of the AP
Printing and Packaging Inc.:
5.1.4.1 Production Area
5.1.4.2 Raw and Packaging Materials Warehouse
5.1.4.3 Finished Goods Warehouse
5.1.5 Temperature and Relative Humidity shall be within the limit as maintained in monitoring sheet. In case deviation
is observed, inform Maintenance Department for corrective action.

5.2 Microbiological Analysis


5.2.1 Machine and Equipment Zone 1
5.2.1.1 Operator shall perform machine and equipment cleaning using approved cleaning solution and
disinfectant before and after using food contact surfaces and at any time contamination
occurs.
5.2.1.2 For Cleaning and Disinfection Instruction refer to Cleaning and Disinfection Procedure 6.0 Spray
Method
5.2.1.3 Effective control measure are taken by Surface ATP Swab Testing in all food contact surfaces (zone 1)
to verify if cleaning and disinfection program are effective and being applied properly
5.2.1.4 Record the value of Relative Light Units (RLU) on Sanitation Weekly Testing
and in EMP Swabbing Result Monitoring for reference.
5.2.1.5 Weekly ATP swabbing verification shall be performed to verify the

disinfection program.
5.2.1.6 ATP result must be within the limit as maintained in monitoring logbook. In case of deviation, inform
the QC Head and advise production operator for re cleaning and disinfection of the machine.

5.2.2 Personnel Hands


5.2.2.1 All personnel shall clean their hands regularly.

In particular, they should wash hands:

Before entering production area;


5.2.2.1.2 Before start of Food Packaging handling activities;
5.2.2.1.3 After handling or preparing raw and packaging materials;
5.2.2.1.4 After handling any
contaminated material, such as waste, cleaning materials and
chemicals where this could
result in contamination of meal boxes.
5.2.2.1.5 Immediately after using comfort room.
5.2.2.1.6 When returning to work after break.
5.2.2.2 Weekly ATP swabbing of personnel hands shall perform after hand washing, before
start of meal boxes
handling activities, QA Analyst shall verify the effectiveness of hand washing and to monitor the
microbiological contamination of personnel hand thru ATP swabbing and validate thru annual
third
party laboratory of conventional micro analysis.
5.2.2.3 Record the value of Relative Light Units (RLU) in the Weekly Sanitation Testing and in EMP
Swabbing Result Monitoring for reference.
5.2.2.4 ATP result shall be within the limit as maintained in monitoring logbook. In case
deviation is observed, inform QC Head and advise personnel to repeat handwashing.
5.2.2.5 Acceptance Criteria for Personnel Hands:
