How to Make Tortellini Tomato Soup

Soup is one of those dishes that you can do just about


anything with. With a worldwide and deep-rooted history
dating back tens of thousands of years to some of the first
civilizations, there has been plenty of time for all types of
recipe experimentation. Whether you are a fan of
vegetables, meats, or just something with a bit of spice,
there’s likely a recipe out there for everyone! This recipe
is easy enough to prepare in under an hour and will leave
you feeling fantastic! The ingredients can be found at
almost any general grocery store and are not too expensive
to make a regular dish! The recipe I will be sharing today
is a delicious tortellini and tomato-based vegetable soup,
so let’s get started with what ingredients we will need!

Ingredients
- 2 tablespoons of olive oil
- 32 ounces of vegetable broth
- 1 diced onion
- 14.5 ounce can of diced tomatoes
- 19-23 ounce bag of frozen tortellini pasta
- 3 pinches of Italian seasoning
- ½ cup of heavy cream
- 2 diced garlic cloves
- A large soup pot (4-8 Quarts)
- Any other vegetables or spices you would like!

NOTE:
These ingredients are typically able to be purchased (minus the pot) for less than
$25, and this recipe may prepare up to five servings! Now that the ingredients have
been gathered, the dish can now be prepared!
Instructions
1. Place the 4–8-quart soup pot on an appropriately sized stovetop at medium heat and
2 tablespoons of olive oil.

2. Add the diced onion and stir for 5 minutes.

3. Add the entire 32-ounce box of vegetable broth to the pot along with the 14.5 ounce
can of diced tomatoes and the pinch of Italian seasoning.

4. Stir and taste the broth as needed until it reaches a gentle boil.

5. Add the full 19–23-ounce bag of frozen tortellini and stir for 3-5 minutes until the
tortellini is cooked through.

6. Remove from the heat and add ½ cup of heavy cream, mix well, and serve with any
other spices or seasonings you desire!
