Circle Pineapple Upside Down Cake

The Circle Pineapple Upside Down Cake was inspired by the logo of the University Athletic
Association of the Philippines (UAAP) was established in 1938.

The Circle Pineapple Upside Down Cake features the colors of the eight-member
universities: National University (blue and gold), Far Eastern University (green and gold),
University of Santo Tomas (gold and white), University of the Philippines (green and
maroon), University of the East (red and white), Adamson University (navy blue and white),
De La Salle University (green and white), and Ateneo de Manila University (sky blue and
white), arranged in a counter-clockwise manner.
On March 10, 2012, it quoted: “The last UAAP swimmer to win seven gold medals was
Enchong Dee, also of De La Salle who is now a television personality, in 2009.”
I love this cake because it’s fast and easy to make, and it always turns out supremely moist,
springy, and fluffy thanks to the buttermilk, sour cream, and oil. That trifecta of moisturizing
and tenderizing ingredients makes it impossible to have a dry cake.

another layer of flavor. The pineapple slices add chewiness and texture to the otherwise
falling-apart-soft crumb.

pineapple upside down cake its signature glistening top and adding so much rich, browned
butter flavor to the pineapple.
