Effect of different ingredients in breadmaking

Objectives:

1. To study the basic process of breadmaking


2. To investigate the effect of different ingredients in breadmaking

Materials:
White flour, whole meal flour, yeast, salt, sugar, shortening, composite bread improver, warm water

Equipment
Oven, dough mixer, weighing scale, measuring jug, timer, loaf tin.

Procedure:
Class will be split into 8 groups and each group will make one type of bread (A to D, Table 1) follow the
procedures below:
1. Preheat the oven to 220°C and grease/line the loaf tin.
2. Metering of ingredients according to Table 1.
3. Mix the ingredients in a dough mixer to optimum development.
4. Place the dough on a floured work surface and ferment for 15 min.
5. After fermentation, knead the dough for 5 minutes.
6. Divide the dough into pieces and mould into the loaf tin.
7. Leave the dough to prove for 30 minutes.
7. Bake for 25 minutes.
8. Remove from the tin and allow to cool.
Results:
1. Cut bread in half. Examine all samples and note their shape, volume, surface features, colour, texture and
flavour.
2. Fill in Table 2 for your and other group’s bread samples.
